Chocolate Peanut Butter Pie

I don't know what my deal is lately, but I have been craving the combination of peanut butter and chocolate. Not good at all for the bikini figure I have been trying to get for vacation, but so yummy I could not resist.....I even licked the paddle attachment and bowl of my pink mixer after making this pie!! You can find the recipe here. After I had finished making it, I decided the this dessert needed a little something I added chopped Reese Cups on top to really put me over the edge! Enjoy!

Peanut Butter Truffle Brownies

Last week we were having a goodbye lunch at the office for one of my co-workers and I volunteered to bring dessert. I was looking for something new that I haven't made before and I was craving chocolate, not that I don't crave chocolate every day, but any way I remembered this recipe I had for Peanut Butter Truffle Brownies so I decided to give it a try. They were very easy to make and so very yummy!! Two ladies at work asked me for the I take that as an indicator that someone else thought they were yummy too. You can't go wrong with the combination of chocolate and peanut butter, don't you agree??

Asparagus - My New Veggie Obsession

I have recently discovered a new green vegetable that I now love - Asparagus. Who would have thought?? Growing up there were not very many green veggies that I would even look at, much less love to eat, except for my mom's garden green beans.....they are the best ever! You just can't think about the fact that she cooks them in bacon grease and butter and are probably about a zillion Weight Watcher points for 1 cup. Anyway, back to my new fascination with asparagus.
It is very quick side dish to make. First rinse the asparagus under running water and then pat dry. Trim off the tough ends about 1 inch and lay them on a baking sheet like this.
Next drizzle them with olive oil and toss them around a little to make sure they are fully covered. Season with freshly ground salt & pepper and place them in a pre-heated 425 degree oven for about 10 minutes. Simple as that! Don't they look pretty all lined up on the plate. Now dig in to some green goodness!

Summer is finally here!!

I love looking out my kitchen window and seeing beach towels drying in the sun after a day by the pool. They are a true sign that summer is finally here - woo hoo!! I absolutely love Summer - it is definitely my favorite season of the year. Here is a list of some of my favorite things about to Hilton Head Island, eating bing cherries & spitting the seeds off my deck, having friends over to swim at our pool, making homemade ice cream, flip flops, fresh blueberries - yum yum, summer league swim meets at Ashby Pool, sitting on my deck and reading a good book, wearing a t-shirt, shorts & flip flops to walk the dog in the morning and not having to bundle up like an Eskimo, pool party picnics and I could go on and on. I just love summer!

Madison's First Prom

This past weekend was Madison's first Prom and she looked beautiful if I do say so myself!
The theme of prom was "A Black Tie Affair". We began the day by picking up their flowers and then headed to the hairdresser to get her hair styled. Don't you just love all the curls!
Ryan's parent's hosted a cookout for a few other kids and their parents so we headed to their house around five. I made Paula Deen's Gooey Butter Cake (recipe found on her website). I also made my yummy recipe for Baked Ham & Cheese biscuits. I'll post the recipe later - you will love them! After the cookout, we walked to nearby Wildwood Park to take photo's. There were so many other kids there taking pictures too, so we got to see a lot of prom attire which was fun. After all the photo taking - they headed off to the dance and Bob and I went to my brother's 40th Birthday Party and then to my friend Sheena's birthday get together too. It was a busy, but fun night!
