Asparagus - My New Veggie Obsession

I have recently discovered a new green vegetable that I now love - Asparagus. Who would have thought?? Growing up there were not very many green veggies that I would even look at, much less love to eat, except for my mom's garden green beans.....they are the best ever! You just can't think about the fact that she cooks them in bacon grease and butter and are probably about a zillion Weight Watcher points for 1 cup. Anyway, back to my new fascination with asparagus.
It is very quick side dish to make. First rinse the asparagus under running water and then pat dry. Trim off the tough ends about 1 inch and lay them on a baking sheet like this.
Next drizzle them with olive oil and toss them around a little to make sure they are fully covered. Season with freshly ground salt & pepper and place them in a pre-heated 425 degree oven for about 10 minutes. Simple as that! Don't they look pretty all lined up on the plate. Now dig in to some green goodness!

  1. Yum. This is my favorite way to make asparagus. Again, a great side for stuffed shells, lasagne etc...
