Unicorn Chex Mix

Unicorn Chex Mix

Hi friends!
Today I am sharing a fun and colorful snack mix perfect for a party or after school snack!
Unicorn Chex Mix! This sparkly snack mix is the perfect combination of sweet and salty
and it's so pretty! Little girls will love this!

I love a good Chex Mix (I've shared many on here on the blog), so when General Mills
sent me a fun package filled with everything I could need to make this Unicorn Chex
Mix I couldn't wait to start melting the white chocolate!  I mean pink sugar! Yes please!!

I couldn't resist adding the adorable Unicorn sprinkles I found at Walmart. They're by
Wilton and they are the CUTEST!

Now excuse me while I dig into this deliciousness!

You can find more Chex Mix recipes here, here, and here.

Unicorn Chex Mix

6 cups Rice Chex or Corn Chex cereal
3 cups Hershey's Premier White Creme Chips (from two 12-oz, bags)
1 1/2 cup Bugles corn snacks
1/4 cups pink, blue or purple decorating sugar
Gold color mist shimmering food color spray, optional
1/4 cup each pink, blue and purple candy melts
3 T multicolored pastel sprinkle blend

Line 2 large rimmed baking sheets with parchment or wax paper. In a large bowl,
add cereal.

In a small microwavable bowl, microwave 1 cup of the white baking chips uncovered
on high 45 seconds, stir. Continue microwaving in 15-second increments, stirring after
each, until chips are melted and can be stirred smooth. One at a time, dip pointed end of
each corn snack into melted chips, and coat outside completely, allowing excess coating
to drip off. Sprinkle coated snack with decorating sugar, and place on one of the pans in
a single layer; set aside.

Add remaining 2 cups baking chips to microwavable bowl and microwave until smooth.
Pour onto cereal in bowl; mix thoroughly to coat. Transfer mixture to one of the pans in
a single layer. Let stand 20 minutes. Spray with food color spray.

In a small microwavable bowl, add pink candy melts. Melt until smooth. Drizzle melted
candy onto coated cereal in the pan. Sprinkle with sprinkles. Repeat process with other colored
candy melts if using. Let stand 20 minutes or place in the freezer for a few minutes for candy
to set.

In a large serving bowl, mix coated cereal, corn snacks and candy pieces. Store at room
temperature in covered container.

Enjoy!
