I've been sharing a lot of breakfast foods with you lately, so I thought it was time to
change the subject and move on to something else I really enjoy.
Are you a snacker?
I definitely am!
Mid-morning snacks, afternoon snacks, travel snacks.
I never go anywhere without my phone, lipstick and some type of healthy snack
in my purse :)
Popcorn has always been one of my favorite afternoon snacks.
It's pretty healthy if you don't load it with butter!
I like to nibble on popcorn at my desk while at work or watching my favorite TV shows.
Bob's Red Mill makes the best popcorn! So fresh, fluffy and flavorful!
You can find it here or most grocery stores.
I prefer to use an air popper, but the stove-top works just fine :)
My Trail Mix Popcorn is a combination of my favorite white popcorn, nuts, seeds,
dried fruit and some dark chocolate throw in for good measure.
It's a delicious guilt-free snack any time of day!
Trail Mix Popcorn
4 C popped Bob's Red Mill White Popcorn
1/4 C pistachios
2 T pumpkin seeds
2 T sunflower seeds
2 T rolled oats
1/4 C low-sugar dried cranberries
1/4 C unsweetened coconut flakes
2 T melted coconut oil
2 T dark chocolate chips
Place pistachios, pumpkin seeds, sunflower seeds and oats on a baking sheet
and roast in a 350 degree oven for 5-7 minutes. Be sure to watch carefully, so
that the nuts do not burn.
In a large bowl, combine popcorn, roasted nuts and seeds, dried cranberries,
dark chocolate chips and coconut flakes.
Drizzle with melted coconut oil, tossing to combine.
Season with ground cinnamon if desired.
