Over the weekend I posted this photo on my Instagram stories with the caption that I
make these bars every weekend and it's true! When I started WW (formerly know as
Weight Watchers) last April I found that most of the granola or protein bars that I had
been eating had more smart points than I wanted to use for a morning or afternoon snack
so I began making these Oatmeal Chocolate Chip Bars.

with a fun and festive Chex snack mix perfect for St. Patrick's Day.  I like to call it
Leprechaun Snack. This tasty St. Patrick's Day snack mix is filled with popcorn,
Chex cereal, pretzels, green chocolate coated candies, gold, green and white sprinkles
and colorful rainbows!

They are quick and easy to make and everyone loves them! Since Valentine's Day will be
here before we know it I decided to share a festive and fun snack mix that I like to refer
to as Cupid's Crunch.

Cupid's Crunch Snack Mix is made up of popcorn, Chex cereal, pretzels, candy and
fun Valentine's Day sprinkles drizzled with white chocolate - yum!

Homemade Chex Snack Mix {Large Batch}













































Every year around the holidays my mom would make homemade Chex cereal snack mix.
My brothers and I would shove it in our faces while watching Rudolph the Red Nosed
Reindeer, Santa Claus in Comin' to Town and Frosty the Snowman. Dad would be in his
Lazy Boy recliner, reading Farm Journal magazine or Reader's Digest and mom would be 
crocheting another afghan or poncho for me. Life was good.

Today I'm sharing a super easy, but oh so good, sweet and salty Halloween snack mix.
It comes together in just a few minutes, but be warned - it is very addicting!

I use Ghirardelli white chocolate melting wafers because I've found that they melt
much easier than candy melts and it tastes better, in my opinion.

I've been harvesting the last of the zinnia's out of my mom's garden these past few weeks.
I love them so much and am going to miss having them in the kitchen. They really
brighten up the house!

Last weekend I whipped up a batch of superfood cereal bars to take to work as a mid-
morning snack and they were so good, I made another batch a few days later!

I love eating at Chipotle Mexican Grill, but the location in our college town is always
super busy.  The students seem to flock there in droves!

The chicken burrito bowl is my favorite, along with a side of chips and guacamole - yum!
I just love Chipotle guacamole and after doing a little research, I found that they actually
share the recipe for their guacamole right on the Chipotle website!  Isn't that nice of them!

My Favorite Trail Mix























I don't go anywhere without a snack or two and this trail mix is one of my favorites
lately. I love customizing my snacks according to my mood and current likes
and right now I am loving Puffins cereal and chocolate sunflower seed drops!

This trail mix is great to keep in your purse, car or at your desk when afternoon
hunger strikes!

You can find my husband and I at Chipotle at least once a week, in line with a hundred
JMU college students.  Our location is always super busy!  We're easy to spot because 
we're usually the oldest ones in the place.  What is it about college students and Chipotle?

Skinny French Onion Dip

Now that summer is here and our pool is open we have lots of friends and family
dropping by for fun in the sun.  I like to have a variety of healthy snacks around because
lounging by the pool is hard work :)
Skinny French Onion Dip with Greek Yogurt
Chips and dip has always been one of our faves, so I thought I would lighten up my go-to
french onion dip recipe by using Stonyfield greek yogurt instead of sour cream.  I love
substituting yogurt for sour cream because it makes the recipe so much healthier and you
can barely tell the difference in taste.

Good-for-You Granola

Granola is good stuff.
It makes yogurt more exciting, but it's also nice healthy snack on it's own.
I usually make granola once or twice a month because you know how I love anything
oats and homemade granola tastes so much better than store-bought.

I like making my own granola because I can control how sweet it is and I can add the
fruit and nuts that my family and I prefer.

This was the first time I had added quinoa to a granola recipe, but I loved the added
crunch and nutty flavor it gave to the granola.  I will definitely add it again!

Duke Dog Snack Mix

Summer is over and once again we are empty nesters.
Our girlie moved into an apartment with her best friend and classes begin tomorrow.
We miss having her around, but at least she is close by :)

College students are always on the go, so I decided to make Madison a somewhat healthy snack
mix to carry around in case she gets hungry between classes.

I thought a festive mix with her school colors would be fun.
Madison is a sophomore at James Madison University and the Duke Dog is their mascot.
I found the purple plastic mini tub at the Dollar Store and cut the letters with my Cricut.
The small container with the clear lid is from Target.
I thought this would be perfect to carry the mix around in her backpack.
The purple and yellow m&m's are from Martin's - I was so excited to find them!

Here's to a new school year!

Duke Dog Snack Mix

mini pretzels
whole almonds
dried cranberries
sunflower seeds
pepitas (pumpkin seeds)
purple and yellow m&m candies

Combine all ingredients and keep in an airtight container.
