Summer gatherings are my favorite.
There's nothing better than friends and family by the pool or on the deck with a drink
in hand and a spread of seasonal appetizers for the taking. I've been trying to get to our
Farmer's Market more frequently this summer and being more intentional about trying
new fruit and vegetables. This year I discovered yellow zucchini and baby plums that
were amazing! Fresh berries are the opitome of summer and are always on my shopping
list!

Corn Dip
Personally I'm not really that much into the game, but I do love to tailgate and I do
love football food!
I've teamed up with some of my foodie friends to bring you 19 football tailgating
recipes perfect for game day! Last year I shared our favorite bacon wrapped tater tots,
easy pepperoni rolls and game day cookie cups. Today I'm sharing our favorite corn
dip recipe. This recipe for corn dip is super easy to prepare and everyone loves it!

Homemade Guacamole {Chipotle Recipe}
I love eating at Chipotle Mexican Grill, but the location in our college town is always
super busy. The students seem to flock there in droves!
The chicken burrito bowl is my favorite, along with a side of chips and guacamole - yum!
I just love Chipotle guacamole and after doing a little research, I found that they actually
share the recipe for their guacamole right on the Chipotle website! Isn't that nice of them!

My New Bar Cart #CheersandCheese
When I spotted this bar cart in the 70% off holiday clearance section at Target I may
have squealed a little. What a deal! I had looked at the cart several times when it was
full price but I couldn't commit and I'm so glad I waited! I proceeded to wheel that
baby right up to the register and got the heck out of there with my deal of the day!

Zucchini Pizza Bites
My parent's garden is going strong and my mom has been supplying me tons of zucchini.

Stuffed Baby Red Potatoes {Appetizer}
My parent's garden is going strong this summer and we are enjoying all of the fresh
garden goodness! Over the weekend I dug some baby red potatoes and picked a few
zucchini, cucumbers and tomatoes. I also went home with a beautiful bouquet of zinnias!
I just love summer!!

Skinny French Onion Dip
Now that summer is here and our pool is open we have lots of friends and family
dropping by for fun in the sun. I like to have a variety of healthy snacks around because

Chips and dip has always been one of our faves, so I thought I would lighten up my go-to
french onion dip recipe by using Stonyfield greek yogurt instead of sour cream. I love
substituting yogurt for sour cream because it makes the recipe so much healthier and you
can barely tell the difference in taste.

Chicken Bruschetta Potato Skins #FWCon
I grew up on a farm where every meal consisted of meat, a vegetable and potatoes.
My mom was and still is an excellent cook who put dinner on the table every single
day without the assistance of Pinterest, the Food Network or Instagram :)
My parents planted a huge garden full of vegetables of every shape and color,
but potatoes were always my favorite.
Digging them out of the ground was not as fun as eating them, but thank goodness
I don't have to do that anymore.
Chicken Bruschetta Potato Skins combine my love of potatoes with one of my favorite
appetizers, Bruschetta. Served with a side salad, my potato skins could easily be a meal.
One of my favorite things about blogging has been attending a few food blog conferences.
Food blog conferences are such a wonderful opportunity for learning, networking and
making new friends. They are so much fun too!

Texas Caviar
In the South, eating pork, collard greens and black-eyed peas on New Year's Day
is believed to bring prosperity and good luck in the new year.
I'm not one for pork and collard greens, so I'll be having my black-eyed peas in
delicious Texas Caviar.
Texas Caviar is a tasty, thick salsa perfect for dipping.
It's packed with black beans, black-eyed peas, corn and more.
Texas Caviar is so hearty I can almost make a meal of it!

Bourbon Pecan Chicken
I served this Bourbon Pecan Chicken as an appetizer at a Christmas party we
hosted over the weekend and several people have requested the recipe, so here it is :)
I have made this dish many times over the years and Bourbon Pecan Chicken is always a hit with guests! I have used plain bread crumbs and panko bread crumbs, either works fine.
Panko breadcrumbs were in the pantry, so that is what I used when making it this weekend.
The crunchy pecan breading and the bourbon sauce are a perfect combination.
Bourbon Pecan Chicken is a tasty dish for any occasion!

Homemade Crackers and a Giveaway!
When I entertain I usually serve cheese and crackers in addition to any other hors d'oeuvre's I may prepare. A cheese and cracker tray is an appetizer that most everyone enjoys.
It's easy to make something as simple as cheese to look nice when you use the right serving pieces.
I love the look of white or metalware or a combination of both when I entertain.
Metalware serving pieces are timeless and look so elegant on a buffet.
I recently had the opportunity to experience first hand the beauty of the Beatriz Ball Collection.
Beatriz Ball pieces are made entirely by hand, using the ancient art of sand casting; pouring a premium quality alloy of molten aluminum into sand molds, and then going through four levels of polishing. Beatriz Ball offers beautiful bowls, ice buckets, trays and platters in addition many other beautiful pieces. Beatriz Ball is the perfect place to shop for the bride and groom!
The company sent me this gorgeous Soho Charcuterie half wood cutting board made of an FDA safe, easy-care 93% aluminum alloy, and wood. My cheese and cracker tray never looked so good!!!
They are super easy to make and you can customize them with your own toppings, such as sesame seed, fennel seed, sea salt, poppy seeds or cracked pepper.
You use a simple dough of flour, water and oil with just a touch of salt and sugar.
I decided to make round crackers with a scalloped cookie cutter.
I was happy with the way they turned out.
They were a nice change from crackers from a box.
Homemade Crackers
1 1/2 cups all-purpose flour
1 1/2 cups whole wheat flour
2 tsp. sugar
2 tsp. salt
4 tsp. extra virgin olive oil
1 cup water
Optional toppings: sea salt, sesame seed, cracked pepper, fennel seed, poppy seed
(I used sea salt, sesame seed and cracked pepper)
Preheat the oven to 450 degrees. Sprinkle a large baking sheet lightly with flour; set aside.
In the bowl of a stand mixer whisk together the flours, sugar and salt.
Add the water and oil; mixing until a soft, sticky dough forms.
Sprinkle your work surface with flour.
Remove dough from mixer and divide into two halves. Shape dough into a square with your hands.
Roll out the dough into a rectangle roughly 1/8 inch thick. Press a small cookie cutter into the dough as many times as you can. Remove excess dough. Using a small metal spatula, place individual crackers onto your baking sheet.
Roll out dough again and cut additional crackers until you have used all of your dough.
Using a pastry brush or your finger, brush the surface of each cracker lightly with water.
Sprinkle with desired toppings. I used sea salt, sesame seed and cracked pepper.
Bake crackers until crisp and just slightly browned; about 7-10 minutes.
Cool on a wire rack. Crackers will keep for about a week in an air tight container.
Yield - 75 -100 crackers, depending upon the size of your cutter.

Chipotle Inspired Corn Salsa
Do you ever go to Chipotle?
Oh my gosh...I love it.
I always order the same thing.
Burrito bowl with brown rice, black beans, chicken, pico de gallo, corn salsa and lettuce.
The end.
Oh that and a Diet Coke :)

I was so excited when I found this recipe!
I grabbed all of the ingredients and started chopping.

I will definitely make this again and again.
It will be even better this summer when I steal fresh corn from my parent's garden :)
Chipotle Inspired Corn Salsa
1 12-ounce bag of frozen sweet yellow corn, defrosted and drained
1-2 medium-sized jalapenos, seeded and chopped
1/3 cup red onion, finely chopped
1/2 cup fresh cilantro, chopped
juice of 2 limes
1/2 teaspoon salt
1/2 teaspoon pepper
Mix all ingredients together in a large bowl.
Serve with chips or as a topping for your burito bowl.

Italian Pinwheels
Here is another recipe for one of our favorite party foods - Italian Pinwheels.
My daughter loves these pizza like appetizers and often requests them on spaghetti night instead of garlic bread. I prefer mine with a side of marinara sauce - yum!
Refrigerated cresent rolls make them easy to prepare.
Serve them at your next party and everyone will love you!
1/2 cup shredded mozzarella cheese
1/2 cup sliced pepperoni, finely chopped
1/4 tsp. dried oregano
1 egg yolk
1 can (8 oz.) Pillsbury cresent rolls
1 egg white, beaten
Heat oven to 375 degrees. In a small bowl, mix cheese, pepperoni, oregano and egg yolk.
Unroll dough; separate dough into 4 rectangles. Firmly press perforations to seal.
Spread each rectangle with about 3 T pepperoni mixture. Starting at the shortest side, roll up each rectangle; pinch edges to seal. Cut each roll into 6 slices. Place, cut side down, 1 inch apart on an ungreased baking sheet. Brush with beaten egg white
Bake 12 to 15 minutes or until golden brown. Serve warm.

Spinach Balls
This recipe is a holiday tradition in our house. I have been making these spinach balls for at least 20 years and they always make an appearance around the holidays. I usually serve them at our annual Christmas party, but they make a tasty hors d'oeuvre for a New Years Eve party too.
I often cut this recipe in half if I am serving several other appetizers. I use two eggs when I do this and half of each of the other ingredients. Give them a try and let me know what you think.
Spinach Balls
2 - 10 oz. packages frozen chopped spinach
3 C Pepperidge Farm Herb Stuffing Mix
3/4 cup butter, melted
1/2 cup grated parmesan cheese
1/2 tsp. thyme
1 med. finely chopped onion
3 eggs, well beaten
1 tsp. pepper
1 1/2 tsp. garlic salt
Cook spinach according to package; drain and squeeze out all of the water.
Add remaining ingredients and mix well.
Shape into balls. Bake at 325 degrees for 15-20 minutes on a lightly greased baking sheet.
Makes 44 spinach balls.
