Watermelon Salsa






















We have eating watermelon like crazy this summer!  I've been buying one every week
from Costco and so far each one I have purchased has been delicious! I know you're
supposed to knock on it or something like that, but we just grab the one that we think
looks good and so far we have been lucky.

Texas Caviar

In the South, eating pork, collard greens and black-eyed peas on New Year's Day
is believed to bring prosperity and good luck in the new year.
I'm not one for pork and collard greens, so I'll be having my black-eyed peas in
delicious Texas Caviar.

Texas Caviar is a tasty, thick salsa perfect for dipping.
It's packed with black beans, black-eyed peas, corn and more.
Texas Caviar is so hearty I can almost make a meal of it!


If you're in need of an easy appetizer for New Years, Texas Caviar is always a hit!

Green Giant Veggie Chips and Texas Caviar






















I don't eat chips too often, but when I do I want them to be as healthy as a chip can be.
Recently I was given the opportunity to try new veggie chips from Green Giant.
Roasted veggies and sweet potatoes in a multigrain chip.
Now that's a chip I wouldn't feel too guilty about eating!

I was sent Garden Ranch Roasted Veggie Tortilla Chips and Barbecue Multigrain Sweet Potato Chips.
First I tried the barbecue sweet potato chips.



















They went perfectly with my veggie wrap.  I loved the barbecue flavor and the crunch!
I think these were my fave, although when I tried the tortilla chips with my Texas Caviar, they were pretty tasty too! I'm pretty sure I'll have no problem finishing off both bags!!



















Texas Caviar

1 can black beans, drained and rinsed
1 can black-eyed peas, drained and rinsed
I can corn, drained
1/2 purple onion, chopped
1 cucumber, chopped
1 green pepper, chopped
1 large jar of salsa
fresh cilantro, chopped

Mix all ingredients in a large bowl.
Serve with tortilla chips.

Overall I was very impressed with the flavor and nutritional value of the chips.
I will definitely buy them in the future when I am shopping for chips.
If you would like to try them, look for the green bag in the snack aisle of your grocery store.
They are also available in Zesty Cheddar and Sea Salt.

Chipotle Inspired Corn Salsa

Do you ever go to Chipotle?
Oh my gosh...I love it.
I always order the same thing.
Burrito bowl with brown rice, black beans, chicken, pico de gallo, corn salsa and lettuce.
The end.
Oh that and a Diet Coke :)



















I was so excited when I found this recipe!
I grabbed all of the ingredients and started chopping.


I will definitely make this again and again.
It will be even better this summer when I steal fresh corn from my parent's garden :)


















Chipotle Inspired Corn Salsa

1 12-ounce bag of frozen sweet yellow corn, defrosted and drained
1-2 medium-sized jalapenos, seeded and chopped
1/3 cup red onion, finely chopped
1/2 cup fresh cilantro, chopped
juice of 2 limes
1/2 teaspoon salt
1/2 teaspoon pepper

Mix all ingredients together in a large bowl. 
Serve with chips or as a topping for your burito bowl.
