Dessert Bruschetta

This post is in partnership with Moms Meet. As always, all opinions are my own.

Summer gatherings are my favorite.
There's nothing better than friends and family by the pool or on the deck with a drink
in hand and a spread of seasonal appetizers for the taking. I've been trying to get to our
Farmer's Market more frequently this summer and being more intentional about trying
new fruit and vegetables. This year I discovered yellow zucchini and baby plums that
were amazing! Fresh berries are the opitome of summer and are always on my shopping
list!

Mini Blueberry Galettes #SummerDessertWeek

This post was created for #SummerDessertWeek. I received samples from some of
our sponsor companies, but as always, all opinions are my own.

We just returned from our annual summer vacation to Disney's Hilton Head Island Resort
and we had the best time! We've been going there almost every year for the past twenty
years and we just love it! I posted lots of photos on my Instagram if you want to see some
of our fun.

Now that summer is in full force, our Farmer's Market is bursting at the seams with garden
vegetables, beautiful flowers and fresh berries. I just couldn't resist picking up some
blueberries for these mini blueberry galettes. Summer dessert couldn't be any easier!

Sprouted Wheat Blueberry Pancakes

Sprouted Grain Blueberry Pancakes with yogurt and granola

Last summer I had the best pancakes of my life in a cozy farm kitchen located in Vermont.
Julie, from Green Wind Farm made them for us while we were on the Stonyfield Farm Tour
and I haven't stopped thinking about them since!

Ever since I started using my new blender, I have been making a lot more smoothies than
usual.  Having a healthy smoothie for breakfast is a perfect way to start your day!

Mini Yogurt Berry Parfaits

Happy Memorial Day weekend!

Mini Yogurt Berry Parfaits

I'm celebrating the long weekend with mini yogurt berry parfaits for breakfast today.
I am also remembering all of the men and women who have died serving our great country.
God bless America!

Roasted Vegetable & Blueberry Salad

I can't believe it's been over a year since I have attended a food blogger conference.
I've only been to a handful of them all together, but I really enjoy them when I
have the opportunity to go.  I learn so much from other bloggers and we have so
much fun together!

Next month is the Food and Wine Conference, which is held annually in Orlando
at Rosen Shingle Creek.  I would LOVE to attend this conference!  Wish Farms is
hosting a "blueberry toss" recipe contest and the person that wins the contest gets
to attend the conference and also wins a gift card and a flat of blueberries.
I would be in blueberry heaven!! I really want to go to this conference so I have
been racking my brain thinking of ideas!

Roasted Vegetable & Blueberry Salad

My family and I eat blueberries daily.  They are so good for you and delicious too!  We
put them in smoothies, on our oatmeal, in salads, baked goods and eat them right out
of the container, so I didn't have any problem coming up with a blueberry salad recipe!

Mixed Berry Yogurt Smoothie

This post was created in partnership with Stonyfield Organics.  As always, all
opinions are 100% my own.

Now that spring has finally arrived I am SO ready to get outside and enjoy the warmer
temperatures.  Sunny weather makes me crave fruit smoothies, so I thought I would
celebrate spring with a mixed berry yogurt smoothie.  This fresh sprig of mint makes
me want to go out and buy herbs for my little deck herb garden!

Make Ahead Pomegranate Blueberry Smoothies

This post was created in partnership with Stonyfield and Ball Canning.
As always, all opinions are 100% my own.

Here in the south we have been drinking sweet tea and lemonade out of Ball Canning
jars forever, so I was super excited when I heard that Stonyfield and Ball Canning
were partnering together this month.  Everything tastes better in a canning jar!

Blueberry Hemp & Flax Muffins

I've been trying to plan ahead and make healthy snacks to take with me to work.
I love me some Larabars and Kind Bars, but they can get expensive every day!
Homemade muffins can be a healthy snack if you use the right ingredients and
that's just what I did with this recipe for Blueberry Hemp & Flax Muffins.

Have you tried hemp seeds yet?  I love these hemp hearts from Manitoba Harvest!

Berry Smoothie Bowl & A Giveaway

This post was created in partnership with Hamilton Beach.
As always, all opinions are 100% my own.

Weekend mornings are a nice time to change things up from my daily breakfast
routine.  I have more time to relax and think about what I'm really in the mood for.
Mixed Berry Smoothie Bowl

Last weekend was nice and warm here in Virginia so I thought a smoothie would be nice
and refreshing.
But if I made a smoothie I would miss my morning oats.
Yikes!
Decisions. Decisions.

Mini Granola Chocolate Fruit Tarts

My fridge is full of berries and I love it!
Summer is the best!
Granola Dark Chocolate Fruit Tarts

After dinner  I was craving something sweet, but healthy too.
Is that too much to ask??
I remembered seeing chocolate fruit tartlets on SkinnyTaste a few days ago and
thought they looked so yummy so I made my own version.

Sweet tooth problem solved :)

Grain-Free Blueberry Muffins

I wake up pretty early during the week to make it to work on time,
but on the weekends I love turning off the alarm and sleeping in.
Best feeling ever!
Grain Free Blueberry Muffins

This past weekend I did manage to get up in time to make it to our local
Farmer's Market before all of the blueberries sold out.
We love fresh berries around here, so I was excited to buy some local organic
blueberries.  I love them on my oatmeal and in smoothies.

Upside Down Cheesecake In A Jar Minis

Most of the time when I opt for dessert it involves chocolate, but every now and then
I crave something sweet and fruity.
Upside Down Cheesecake In a Jar Minis

I love cheesecake, but since I do not need an entire cheesecake sitting around tempting
me, I decided to make a few mini cheesecakes to curb my sweet tooth.

Blueberry Pancake Squares

When our daughter was younger I made pancakes every weekend.
She loved pancakes with chocolate chips.
I would always try to make them a little healthier by adding some flax
seed and whole wheat flour.
Mom's can be sneaky like that :)
Now that she's in college and living in an apartment I rarely make pancakes.
I miss those times.

I was feeling a little nostalgic, so I decided to make pancakes for my husband and I.
Instead of standing over a griddle with a spatula in hand, I decided to bake them.
That way I could get started on some of my weekend chores while the pancakes were
cooking themselves.
Pretty smart, huh.

Blueberry Oat Smoothie

I am not a winter person, but I do love January and all of the promise
that a new year brings.
I love setting goals, making lists, organizing.

Eating healthy, whole foods the majority of the time and exercising daily
is at the top of my list. That doesn't mean you won't see cupcake and dessert recipes here,
I believe in everything in moderation, but you will see more healthy recipes made
with real ingredients.
I hope you'll stick around :)
We can be healthy together!

Smoothies make the perfect healthy breakfast, lunch or snack.
They are so versatile - you can throw in whatever fruit you have available.
I always keep a supply of frozen bananas, spinach and berries on hand so
I can make smoothies whenever the mood strikes.

Blueberry Corn Salad

I'm going to miss summer!
It's been so nice to go out on our deck and grab a cucumber and a handful of cherry tomatoes
or stop by my parents farm for potatoes, zucchini or whatever vegetables they may have an abundance of.

On my visit this week mom gave me a bag of corn on the cob and some green peppers.
Since this will probably be the last of the sweet corn I decided to make a special salad for our
labor day weekend cookout.

Mixed Berry Hemp Seed Muffins

I first heard about the benefits of hemp seeds a few months ago and have been using them in my green smoothies.
Hemp seeds are super high in protein, full of a wide array of vitamins and they are full of Omega-3 and Omega-6 fatty acids.
They are pretty much a nutrition powerhouse!

Blueberry Cupcakes with Cinnamon Buttercream Frosting

Not too long ago we had a pot-luck breakfast at work.
I was asked to bring cupcakes.
Wonder why :)

I decided that if you add fruit, then it's totally acceptable to eat a cupcake for breakfast.
My co-workers must have agreed because they were all gone in about 5 minutes.

Blueberry Cupcakes
with Cinnamon Buttercream Frosting

1 pkg. white cake mix
1 cup buttermilk
4 eggs
1/3 cup canola oil
8 oz. package frozen blueberries, rinsed and drained
fresh blueberries for garnish if desired

Preheat oven to 350 degrees.
Place cupcake liners into cupcake pan.
In a large mixing bowl combine cake mix, eggs, buttermilk and canola oil with an electric mixer.
Beat for 2 minutes; occasionally scraping the sides of the bowl.
Fold in blueberries
Using a large cookie scoop, drop batter into liners.
Bake for 18-20 minutes or until toothpick inserted comes out clean.
Place cupcakes on a wire rack to cool.

Cinnamon Buttercream Frosting:

2 sticks unsalted butter, softened
4-5 cups powdered sugar
1 tsp. vanilla
1 tsp. ground cinnamon
1-2 T heavy cream or milk

In the bowl of an electric mixer, cream together the butter, powdered sugar and vanilla for 2-3 minutes on med-high speed.  Lower the speed and add the cinnamon and milk. Beat for another 3-5 minutes until light and fluffy. Frost cooled cupcakes.  Top with a fresh blueberry.
