My nasturtium plant has finally bloomed and it makes me so happy!
I was a little late in the game getting it planted, but now it's finally producing some blooms
and I love adding these peppery tasting editable flowers to my salads. I'm not sure how long
it will last into the fall, but with these warm temperatures we've been having in Virginia,
I hope to get a few more weeks of blooms from it.

Radicchio + Roasted Squash Salad

We just found out that my in-laws are coming to visit us over Christmas and we're super
excited. They live in Texas, so we only get to see them once or twice a year and it's been
a couple of years since we have been together for Christmas. This holiday season is going
to be really hard because it will be our first Thanksgiving and Christmas without my mom.
I miss her every single day and I know that the holidays are going to tough, so it will be
nice having my in-laws here with us.
I can't believe Thanksgiving is only two and a half weeks away! Weren't we just
celebrating the 4th of July?!

Salad in a Jar with Creamy Balsamic Yogurt Dressing
Now that summer is almost here and the weather is nice, our weekends are packed with
pool time, graduation parties, picnics and more. I just love this time of year!
Grilling and salads become the norm for dinner because who wants to be in the kitchen
when it's nice outside - not me! I also pack salad in my lunch for work much more during
the summer months too.

Pesto Croutons
Ann Street (Jackson Square). It was a mixed green salad with pesto croutons and roasted

Cranberry Pecan Quinoa Salad Cups
So far this year I have been pretty good with the healthy eating thing. I've been drinking

Cornbread Croutons
Aren't summer salads the best! I love going out onto the deck to pick little cherry
tomatoes and cucumbers right off of the vine and going to the Farmer's Market for
all different types of freshly picked greens. I can make a meal out of a good salad!
Recently I was introduced to Joseph® Joseph, an innovative company specializing in products
for the kitchen. They sent me the Hands-On Salad Bowl and Server, as well as the
Index Chopping Boards. I decided to give them both a try while making a fresh garden
salad with cornbread croutons.

Summer Fruit Salad
Now that melons and berries are in season, I enjoy preparing fruit bowls for my family
to enjoy as a healthy snack or as a side for lunch or dinner. Having fruit washed, cut
and ready to eat makes it so much easier to make healthy choices. I would rather have
this pretty bowl of summer fruit salad for a snack than a bag of chips or crackers!
I love OXO Good Grips Glass Snap Containers for keeping cut fruit and vegetables fresh,
ready to eat and easily transportable. They come in a variety of sizes from 1 cup to 7 cup
and are perfect for salads, leftovers and side dishes. The snap lids are leak proof, so I
can carry them in my lunch bag to work and not worry about liquid leaking out all over
the place! They go from freezer to the oven with no problem at all!

Strawberry Spinach Salad Cups
I served these individual Strawberry Spinach Salad Cups at Madison's graduation party to
add a little green to the buffet and I loved them! I'm a sucker for miniature desserts and
individual servings anyway, I just think they are adorable.

I thought about serving the salad in 4 oz. jelly jars, but opted for Chinet 9 oz. clear plastic
cups because they are wider and disposable for easy party clean up. I placed the strawberry
spinach salad cups on a silver galvanized tray and they looked so pretty. I served poppy
seed dressing on the side. They would be perfect for a Memorial Day cookout this weekend!

Roasted Vegetable & Blueberry Salad
I can't believe it's been over a year since I have attended a food blogger conference.
I've only been to a handful of them all together, but I really enjoy them when I
have the opportunity to go. I learn so much from other bloggers and we have so
much fun together!
Next month is the Food and Wine Conference, which is held annually in Orlando
at Rosen Shingle Creek. I would LOVE to attend this conference! Wish Farms is
hosting a "blueberry toss" recipe contest and the person that wins the contest gets
to attend the conference and also wins a gift card and a flat of blueberries.
I would be in blueberry heaven!! I really want to go to this conference so I have
been racking my brain thinking of ideas!
My family and I eat blueberries daily. They are so good for you and delicious too! We
put them in smoothies, on our oatmeal, in salads, baked goods and eat them right out
of the container, so I didn't have any problem coming up with a blueberry salad recipe!

Hi Friends!

Blueberry Corn Salad
I'm going to miss summer!
It's been so nice to go out on our deck and grab a cucumber and a handful of cherry tomatoes
or stop by my parents farm for potatoes, zucchini or whatever vegetables they may have an abundance of.
On my visit this week mom gave me a bag of corn on the cob and some green peppers.
Since this will probably be the last of the sweet corn I decided to make a special salad for our
labor day weekend cookout.

Blackberry Spinach Salad
During the summer months there's nothing like a fresh cool salad for lunch or dinner.
Romaine, baby spinach and kale are my favorite greens.
I like to top my salad with some type of fruit, a little protein and then a few Diamond nuts
to add a little crunch!
Sliced almonds, chopped walnuts, pine nuts - I love them all!

Diamond Nuts recently sent me a few packages of nuts, along with some recipe cards to inspire
me to come up with some new salad combinations.
The beautiful blackberries I purchased last weekend at our local farmers market were just the
inspiration I needed.
