Happy Monday! How was your weekend?
Mine was super busy once again. Our house is still a mess from the process of removing
carpet and installing hardwood floors and I've been doing a lot of painting. We decided
to hire a professional to finish things up and hopefully that will happen this week. I will
be so glad to get our house back in order!

My Go-To Morning Smoothie

Weekday mornings can be hectic and rushed, especially after school begins, when
we're trying to get back into the swing of things. I allow myself plenty of time in the
morning, waking up two hours before I need to be at work, but somehow I'm always
rushing out the door. Probably because I try to get too much done before I leave, but
there's so much to do! #momproblems
When I'm running late and there's no time for breakfast, my go-to is a healthy protein
smoothie that I can drink during my commute or when I get to the office. Most often
my smoothie includes frozen banana, chocolate protein powder, flax seed, almond
butter and almond milk. Sometimes I throw in a few frozen berries too.

Crusted Cinnamon French Toast
Happy Friday friends!
Today I'm posting a quick, easy and delicious recipe for crusted cinnamon french toast.
This french toast is SO good and perfect for lazy weekend mornings. I plan on making
it again on Sunday!

Crusted Cinnamon French Toast
4 slices Dave's Killer Bread
2 large eggs
1 T unsweetened almond milk
1 tsp. vanilla extract
1/4 cup hemp seeds
1/4 cup ground flax seeds
2 tsp. ground cinnamon
1 T coconut sugar
1 T butter or coconut oil
In a shallow bowl, whisk together eggs, vanilla and almond milk.
In another shallow bowl, mix together hemp seeds, flax seeds, cinnamon and sugar.
Melt butter over medium heat in a large frying pan.
Dip both sides of bread slices in egg mixture and then both sides in hemp seed mixture.
Place bread into heated pan and brown on each side.
Serve with warm maple syrup and fresh fruit.

What's in my Vitamin Box

Yes - I am old and need a pill box to organize my vitamins and supplements.
Don't make fun.
Each Sunday I fill it up for the week and I keep it in a tote bag that I carry to work
each day. Once I get to the office I place it on my desk and take one or two vitamins
every few hours. I've never been one who can take all of my vitamins at once, it
upsets my stomach. Spreading them out throughout the day works better for me.

Smashed Chickpea Salad Lettuce Wraps

I mentioned a few weeks back that my husband and I were trying to eat more
vegetarian meals for dinner since neither one of us are big meat eaters and we've really
enjoyed trying new recipes. Chickpeas have been the star of several of our new
vegetarian dinners. We especially liked chickpea stir-fry and garlic spinach pasta with
chickpeas. Vegetarian chili for two was also a winner!

Banana Vanilla Protein Smoothie Bowl

Now that spring is here and the weather has finally warmed up, I'm back on the smoothie
train again. On weekends I love making smoothie bowls and enjoying them outside
on the deck or by the pool. During the week shakes are more my style, making them
easy to drink on the way to the office. Nutritional smoothies help give me the energy
to do my best and I feel good when I drink them.

Peanut Butter and Jelly Yogurt Parfaits

Superfood Cereal Bars
I've been harvesting the last of the zinnia's out of my mom's garden these past few weeks.
I love them so much and am going to miss having them in the kitchen. They really
brighten up the house!
Last weekend I whipped up a batch of superfood cereal bars to take to work as a mid-
morning snack and they were so good, I made another batch a few days later!

Pitaya Smoothie Bowl
The warmer temperatures here in Virginia have me craving smoothies and smoothie bowls

A few years ago my husband and I made the decision to buy organic food as much as
reasonably possible. We made this decision in order to try to lower our exposure to
dangerous pesticides and cancer causing hormones. We concentrate on choosing organic
fruit and vegetables, especially the dirty dozen, yogurt, juice and poultry.

I have a confession to make.

I may or may not have asked them to grab one or two from hotel breakfast bars when
we are traveling and don't even get me started if they try to toss one out that may look

Yogurt, Fruit & Muffin Parfait
Most of the time when I make muffins for my family I make them from scratch.
I usually have all of the ingredients on hand anyway, so why not.
But sometimes I'm out of one key ingredient, and thats when I'm happy I keep muffin
mix on hand. As you all know, I am a huge fan of Bob's Red Mill products, and although
we don't have to use gluten-free products, I love Bob's Gluten-Free Muffin Mix.

Layered Fruit & Yogurt Smoothie and prAna Tankini
Spring and summer are my favorite seasons. There's just something about warm weather,
flowers in bloom, and lazy days by the water that help me feel relaxed and complete.
I love feeling the warmth of the sun and sipping on something cold to drink, while reading

Why I Use a Food Scale
I'm not technically on a "diet", but I have been paying close attention to what I eat
and how much I eat since the beginning of the year. I gained a few extra pounds over
the past 24 months, and while I'm not over weight, I have not felt comfortable with the
way my clothes have been fitting. This past January I was finally in the right mind set
to get serious and lose the extra weight.
I am all about moderation, so I have not been depriving myself of anything, I'm a
food blogger for goodness sake, but I have been focused on eating less processed food
and making healthy, clean choices when it comes to food.
