3-Ingredient Healthy Pancakes

3-ingredient Healthy Pancakes for One

I have been craving pancakes on Sunday mornings for some reason.  A couple of
weekends ago I made Sprouted Wheat Blueberry Pancakes, which were absolutely
delicious, but on this particular day I wanted simple and easy.

Sprouted Wheat Blueberry Pancakes

Sprouted Grain Blueberry Pancakes with yogurt and granola

Last summer I had the best pancakes of my life in a cozy farm kitchen located in Vermont.
Julie, from Green Wind Farm made them for us while we were on the Stonyfield Farm Tour
and I haven't stopped thinking about them since!

Mother's Day Brunch with Minted

This post is in partnership with Minted.  As always, all opinions are 100% my own.
Thank you for supporting brands that make Me and My Pink Mixer possible.

Holiday's have a way of sneaking up on me.
Easter totally did this year.
I'm not sure why that is, but my goal for the rest of the year is to stay on top
of things and be prepared.

This year Mother's Day weekend will be super busy for us and exciting too because
both of our mother's will be here!  Our daughter Madison graduates from college
that weekend, so all of our family will be here to celebrate.  Since the day after the
graduation party is Mother's Day, I think a Mother's Day Brunch will be perfect.

Sunday, May 8th is also my birthday, so I want to keep things simple and relaxing
after all of the weekend excitement!

I like to keep party decor simple and classic, so I turn to Minted to help me host an
elegant get together.  I am a list maker and note taker, so this beautiful, personalized
Minted color block notebook is perfect for writing notes about my menu plan, guest list,
grocery list and things I want to remember.  The colors are so me!

Quinoa Coconut Pancakes

Happy Monday friends!
How was your weekend?
Mine was great - thanks for asking :)
The weather was beautiful here in VA, so we did a lot of yard work.
I have a blister from so much raking to prove it!

Sunday was a little more low key, so I decided to switch things up and I made
pancakes for breakfast.
I haven't made them foreverrrrrrrrrrr!

Blueberry Pancake Squares

When our daughter was younger I made pancakes every weekend.
She loved pancakes with chocolate chips.
I would always try to make them a little healthier by adding some flax
seed and whole wheat flour.
Mom's can be sneaky like that :)
Now that she's in college and living in an apartment I rarely make pancakes.
I miss those times.

I was feeling a little nostalgic, so I decided to make pancakes for my husband and I.
Instead of standing over a griddle with a spatula in hand, I decided to bake them.
That way I could get started on some of my weekend chores while the pancakes were
cooking themselves.
Pretty smart, huh.

Almond Pancakes {Gluten Free}

When it comes to breakfast food oatmeal is definitely my fave, but every now and then I get a craving for pancakes or waffles.  Last Sunday was one of those days.

Since I'm trying to eat healthier, I made the pancakes with almond flour and omitted sugar.
I topped them with banana slices, raspberry chia seed jam and a drizzle of pure maple syrup.
They were delicious and I had leftovers to last through the work week - yay!

Almond Pancakes

3 cups almond meal (almond flour)
1 T ground flax seed
1/2 tsp. salt
1/2 tsp. baking soda
3 large eggs
3/4 cup unsweetened almond milk
2 T coconut oil
cooking spray

Combine almond meal, flax seed, salt and baking soda in a large mixing bowl.
In a separate bowl, whisk eggs, add almond milk and oil and continue to whisk thoroughly.
Add dry ingredients to the wet, mixing just until combined.

Lightly coat a large skillet or griddle with cooking spray and heat over medium heat.
Pour about 1/4 cup batter onto skillet for each pancake.  Cook for a few minutes until bubbles form on the surface and edges look dry.  Flip and cook other side.  Serve warm with fresh fruit, raspberry chia jam and pure maple syrup.

Makes 14 servings.

Bisquick Pumpkin Pancakes

I was in the mood for pancakes this weekend, but had used all of the flour in the house last time I had baked snickerdoodle cookie tarts.  Note to self - add flour to the grocery list.

Anyway, after searching around the pantry I did find some Heart Smart Bisquick - score!
The pancakes turned out delicious and I will definitely make them again soon.
Who knew Bisquick could be so handy to have around :)

Bisquick Pumpkin Pancakes

1 1/4 C Heart Smart Bisquick
1 1/2 T brown sugar
1 1/4 tsp. pumpkin pie spice
1 egg
1 C buttermilk
1 T canola oil
1/2 C pumpkin puree (I used Libby's)

Heat pancake griddle to medium heat (I put mine on 350).
In a medium mixing bowl, combine Bisquick, brown sugar and pumpkin pie spice.
In a small bowl whisk together egg, buttermilk, oil and pumpkin puree.
Add wet ingredients to dry, stirring just until combined.

Spoon batter onto the hot griddle, using approximately 1/4 cup per pancake.
Brown on both sides and serve.
Makes 6-7 pancakes.

Mini Pancake Bites

With school starting soon, I thought I would share a quick and easy breakfast that most kids will love.
Pancake Bites!
Pancake Bites are mini pancake muffins that you can dip into syrup and pop in your mouth.
How fun is that!
Speaking of syrup...did you know Epicurious recently named Mrs. Butterworth's the best overall pancake syrup, with Log Cabin coming in as the second runner-up.
We've been using Mrs. Butterworth's syrup forever, so that doesn't surprise me at all.

Pinnacle Foods asked me to come up with a recipe post about delicious ways to use syrup.
I think pancake bites are definitely a delicious way to use Mrs. Butterworth's.

I use my Pampered Chef mini muffin pan to bake them bite size.
I made raspberry,

mini chocolate chip

and blueberry.  Next time I may try peaches or strawberries.

You can also freeze them and pop them into the microwave to make your morning even easier!
What are you waiting for?!?
Grab some Mrs. Butterworth's syrup, make some pancake bites and start dipping :)

Mini Pancake Bites

1 cup flour
1 tsp. baking powder
1/2 tsp. baking soda
1/4 tsp. salt
2 T sugar
2/3 cup buttermilk
1 egg
2 T maple syrup
2 T melted butter
mini chocolate chips and/or fruit of your choice

Preheat oven to 350 degrees.  Prepare mini muffin pan by coating it with cooking spray.
In a medium bowl, combine flour, baking powder, baking soda, salt and sugar.
In another bowl, whisk together buttermilk, egg, maple syrup and melted butter.
Add wet ingredients to dry and stir just until combined.
Since I was making several different varieties, I divided my batter and then added the raspberries, blueberries and chocolate chips.
Using a mini cookie scoop, drop batter into each muffin cup.
Bake for 8-9 minutes.  Remove from oven to cool slightly before removing the pancake bites from the pan.
Serve immediately with syrup for dipping.
Makes 24-30.

Disclosure - I received coupons for Mrs. Butterworth's syrup and a gift card to purchase supplies for this recipe.  All opinions are my own.

Aunt Jemima: Lil' Griddles

I've never been one of those people that skip breakfast.  I need that morning fuel to get me moving!
I know how important that morning meal is for my daughter too, that's why I have always made sure she's had a healthy breakfast over the years.

She's a teenager now and still loves pancakes, french toast or scrambled eggs before she goes to class.

On crazy mornings, when I'm short on time,  I let Aunt Jemima do the cooking.
With Aunt Jemima every batch is made from scratch with real eggs, milk and butter.

Aunt Jemima frozen breakfast takes great pride in making frozen pancakes, waffles and French toast just like moms across America make breakfast in their own kitchens -- their griddles are just a little bit bigger :)

With new Lil’ Griddles from Aunt Jemima frozen breakfast, families now have big breakfast taste, bite-sized.
They're ready in just 50-55 seconds in the microwave or 3-5 minutes in the oven.
I prefer the oven method.
Aren't they cute!

The new Aunt Jemima frozen breakfast Lil’ Griddles line has three delicious bite-sized options for family fun; new Aunt Jemima frozen Blueberry Mini pancakes, Aunt Jemima frozen Mini pancakes, and Aunt Jemima frozen Cinnamon French Toast Sticks.  They are available in frozen food isle of your grocery store.
I found them locally at Food Lion and Martin's.

Want to give them a try for your family?  Click here to request a coupon.

My teenager can be picky, so I was a little worried trying something new.

Guess they passed the picky eater taste test.
This is how I found the plate when she was done.
Way to go Aunt Jemima!
