Baked Banana Oatmeal

Hey friends! How are you all holding up?

I've settled in to working from home and have come up with a schedule that works for me.
I miss my co-workers and visiting our residents, but I do enjoy being home with our
sweet dog Scout, going for walks in the middle of the day if I choose and not having to worry
about what I'm going to wear to work every day. Leggings and sweatshirts for the win!

I don't know about you, but I've been craving all the comfort food. Oatmeal is one of my all
time favorites, maybe because my mom used to make it for us when we were kids. She made
the cook on the stove top kind, not instant, with brown sugar, cinnamon and milk. It was so
warm and cozy! I've been thinking about her a lot lately (last week marked two years since
she passed away), so I decided to make this baked banana oatmeal in her honor.
It gives me all the feels and now I have breakfast ready for the week. I hope you enjoy it too!

Baked Banana Oatmeal

2 cups rolled oats
2 ripe bananas (one mashed and one for slicing for the top)
1 1/2 cups milk (I used unsweetened almond milk)
1 egg
1 tsp. baking powder
1/2 tsp. salt
1 tsp. pure vanilla extract
1/2 tsp. ground cinnamon
1 T coconut sugar or brown sugar

Preheat oven to 375 degrees.
Spray a glass pie plate with cooking spray.

In a large bowl combine oats, baking powder, salt, cinnamon and coconut sugar.
In a small bowl whisk together mashed banana, milk, egg and vanilla.
Add the wet ingredients to the dry ingredients and mix until combined.
Pour oat mixture into the prepared pie plate. Top with sliced banana.
Bake for 30 minutes or until set.

Frost with nut butter of your choice. Serve with fresh berries and milk.

WW Oatmeal Chocolate Chip Bars

Over the weekend I posted this photo on my Instagram stories with the caption that I
make these bars every weekend and it's true! When I started WW (formerly know as
Weight Watchers) last April I found that most of the granola or protein bars that I had
been eating had more smart points than I wanted to use for a morning or afternoon snack
so I began making these Oatmeal Chocolate Chip Bars.

Baked Oatmeal Cups

Any oatmeal fans out there?

Oatmeal is one of my most favorite breakfast foods. It's delicious, hearty and good for you
too! Every few Sundays I bake a batch of these Baked Oatmeal Cups and then freeze them
to enjoy throughout the month. I top them with fresh berries, sliced figs, bananas or Lily's
chocolate chips. They are 3 Weight Watcher Smartpoints each using my recipe.

Strawberry Overnight Oats

I go through cycles with my oatmeal.  When I have a lot of bananas on hand, I make my
Perfect Morning Oats.  Sometimes I'll be in a steel cut oats mood, so I'll make this or
this.  When we have guests over I'll make baked oatmeal, but lately I've been craving
overnight oats and now that strawberries are in season I decided to make strawberry
overnight oats.  I think in may be my new favorite!

You can even hit that snooze button once or twice since your breakfast is already to go!

I'm on a smoothie drinking kick and I can't stop, especially since I have a
new, pretty pink Shake It® Shaker! This shaker is so fun and I love the
bright pink! It's perfect for smoothies on the go! If you're not partial to

Today's smoothie is an Oatmeal Cookie smoothie made with Kura protein powder,
oats, almond butter and more.  This may be my new favorite smoothie, it's that good!

Have I told you lately how much I love oatmeal?
For real.
I LOVE oatmeal!
It's delicious, warm and so comforting!





















My breakfast most mornings consists of breakfast tea and oatmeal with fresh berries,
almond butter and flax or chia seeds.  Or a smoothie, but I add oats to most of those :)
I love it so much that when I travel I pack my own DIY Travel Oatmeal to make in the
hotel. Now I don't have to make my own because Bob's Red Mill does it for me!

Oats and Prune Energy Bars

I don't know about you, but around 10:00 a.m. or so I'm always ready for a mid-morning
snack to keep me going until lunch.  I've been trying really hard to make wise choices for
healthy snacking in the new year and I have found by making my own snacks and
bringing them with me to work, I stay on track and avoid the temptation of the office donuts.

Raspberry Baked Oatmeal Cups for National Oatmeal Day #BerryNOats

Happy National Oatmeal Day!
Truth be known, everyday is oatmeal day in our house.
We LOVE oatmeal!
My favorite is oatmeal topped with fresh berries, almond butter and a little
almond milk.
Driscoll's organic berries to be precise.
They are  on our grocery list EVERY week!
Berries are low in calories, high in fiber and taste fantastic!





















I do not discriminate against oatmeal.
I will eat instant oatmeal, steel cut oats, baked oatmeal, slow cooker oatmeal - whatever!
It's my fave!
