Only one more day until it is officially summer and I couldn't be happier.
Summer is my favorite!

We had a ton of rain over the past few weeks, so the weather wasn't the best for grilling,
but that didn't matter because I used my beautiful Le Creuset Signature Lite Grill Pan to
create a delicious meal with outdoor grill flavor!

The signatue lite grill pans works great on my ceramic stove top and it cleans up nicely
afterwards too. Le Creuset quality just can't be beat!

Today I'm sharing a quick and healthy dinner I made recently using the Signature Lite
Grill Pan - grilled shrimp and pineapple skewers. I whisked together a simple marinade
using soy sauce, olive oil, honey, ginger and lime juice and tossed the shrimp and pineapple
for a few minutes before grilling. While the shrimp was on the grill pan, I made a package
of pine nut couscous to serve with the skewers. Quick, easy and delicious - just the way
dinner should be!

Grilled Shrimp and Pineapple Skewers

Grilled Shrimp and Pineapple Skewers with Couscous

1 (16 oz) package extra large shrimp (I only used half of the bag)
2 cups fresh pineapple, cubed
1 red pepper, diced
2 T soy sauce
1 T honey
1/2 T ginger stir-in paste
1 T olive oil
juice of one lime
1 package of couscous or side of your choice

In a large bowl, whisk soy sauce, honey, ginger, olive oil and lime juice.
Add the shrimp and pineapple, tossing to coat.
Thread shrimp, pineapple and red pepper onto metal skewers.

Grill for 3-4 minutes per side, until shrimp is pink and opaque.
Serve over couscous, quinoa or rice.
