Happy Fall Eve!

To be honest, I'm not really that happy about the end of summer, but I am happy about
season two of This is Us and the return of Will and Grace on TV next week! Do you all
remember Will and Grace? Did you watch it back in the late 90's? I loved that show and
am so excited that it's coming back!

I'm also excited for fall baking, soup making and cozy casseroles.  Once the weather
gets a little chilly I'm all about making large pots of soup or cheesy casseroles every
weekend! Yum!

Oven Baked Crinkle Cut Potatoes

I remember my mom making homemade french fries for us, cutting the potatoes by hand
with her favorite paring knife.  It was so hard waiting for her to slice all of the potatoes,
but they were the so good once they were done! We had one of those Fry Daddy deep
fryer's on our kitchen counter - they were really popular during the late 70's, when we
weren't worried about hardening our arteries - ha ha. Anyone remember them?
Do they still make Fry Daddy's? I need to find out. They did make the best french fries,
but they weren't the healthiest that's for sure.

My parent's garden is going strong this summer and we are enjoying all of the fresh
garden goodness! Over the weekend I dug some baby red potatoes and picked a few
zucchini, cucumbers and tomatoes.  I also went home with a beautiful bouquet of zinnias!
I just love summer!!

Onion Roasted Potatoes

Today I'm posting one of my family's favorite recipes.

My mom found the recipe for these delicious potatoes on the back of the box of
Lipton Onion Soup Mix years ago and I've been making them for my family for
the past 30 years.  My daughter loves them and requests them often!

This recipe is super easy and makes a perfect side dish for dinner on busy weeknights.  
Most of the time I use russet potatoes, but I love using small red potatoes from my 
parent's garden in the summer!

Chicken Bruschetta Potato Skins #FWCon

I grew up on a farm where every meal consisted of meat, a vegetable and potatoes.
My mom was and still is an excellent cook who put dinner on the table every single
day without the assistance of Pinterest, the Food Network or Instagram :)

My parents planted a huge garden full of vegetables of every shape and color,
but potatoes were always my favorite.
Digging them out of the ground was not as fun as eating them, but thank goodness
I don't have to do that anymore.

Chicken Bruschetta Potato Skins combine my love of potatoes with one of my favorite
appetizers, Bruschetta.  Served with a side salad, my potato skins could easily be a meal.

Food blog conferences are such a wonderful opportunity for learning, networking and

Mixed Potato Gratin

Today I am sharing one of the side dishes I made for Thanksgiving since my sister-in-law and cousin have both requested the recipe.  This is the second year I have made this cheesy potato dish - it's definitely a keeper!

I thought about making a sweet potato mash this year, but in the end I opted for the Mixed Potato Gratin once again. 
It may just become a new tradition.

I'm sure a mandoline would make slicing the potatoes much easier, but since I do not own one, I went the old fashioned route and used a knife :) 
Just make sure all of your slices are the same thickness so that the potatoes cook evenly.

This potato dish is the perfect side any time of year.

Mixed Potato Gratin

3 large Russet potatoes
3 large sweet potatoes
1 1/2 cups heavy cream
2 garlic cloves, minced
1 T minced fresh thyme
1 1/2 tsp. sea salt
1/2 tsp. freshly ground black pepper
1 1/2 cups shredded Gruyère cheese
3/4 cup shredded parmesan cheese
2 T butter, cut into small pieces

Peel all of the potatoes.
Using a mandolin, food processor or very sharp knife, cut them into 1/8-inch-thick rounds and place them in a bowl.
In another medium sized bowl. combine the cream, garlic and thyme and set aside.
Place 1/2 cup of the shredded gruyere cheese aside to use for the topping.
Spray a 9x9 baking pan with cooking spray and layer the potatoes, alternating colors in 1 even layer. Sprinkle the top of this layer with some salt and pepper, a little bit of gruyere cheese and a little bit of parmesan cheese. Repeat this process until you use up all the potatoes. I had about 4 layers.
Preheat oven to 400°F.
Pour the heavy cream over the mixture once all your layers are done. Sprinkle the top with the remaining gruyere cheese and dot it with butter.
Cover gratin tightly with foil and bake for 30 minutes. Remove the foil and bake for 25 minutes longer. Let it set for a few minutes before serving.
