Onion Roasted Potatoes

Today I'm posting one of my family's favorite recipes.
Onion roasted potatoes.

My mom found the recipe for these delicious potatoes on the back of the box of
Lipton Onion Soup Mix years ago and I've been making them for my family for
the past 30 years.  My daughter loves them and requests them often!

This recipe is super easy and makes a perfect side dish for dinner on busy weeknights.  
Most of the time I use russet potatoes, but I love using small red potatoes from my 
parent's garden in the summer!

I often serve onion roasted potatoes with grilled chicken breasts and a side salad for dinner.
Leftovers, if you have any, are just as delicious the next day!

Onion Roasted Potatoes

1 envelope Lipton Recipe Secrets Onion Soup Mix
2 lbs. all-purpose potatoes cut into chunks (about 4 medium) 
1/3 C olive oil

Preheat oven to 425 degrees.  Line a large baking sheet with aluminum foil.
Place potatoes on the prepared baking sheet.
In a small bowl combine olive oil and soup mix.  Pour soup mixture over potatoes,
tossing to evenly coat.  Bake, stirring occasionally, until potatoes are tender and
golden brown, about 35 minutes.

Yield - 4 servings
