I can't believe it's the second week of August already!
Summer is flying by!
Between our little deck containers, my parents huge garden at the farm
and visits to our local farmer's market our fridge is bursting at the seams
with fresh fruits and vegetables.
Dinner is so easy during the summer.
Since we have so many cucumbers and tomatoes from our container gardens I serve
some type of salad most evenings. I enjoy coming up with new flavor combinations
by adding different nuts, cheese and even fruit to our salads.
We have been taking advantage of the warm summer evenings and having our dinner
outside on the deck. I love listening to the summer sounds of the neighborhood while
we catch up on each others day.
Even when it's just the two of us I sometimes like to make the evening more special
by using pretty plates, cloth napkins and colorful serving bowls.
I chose this beautiful Enrico Honeycomb salad bowl and the

Honey mustard is one of our favorite salad dressings and I've made it even healthier
by using Stonyfield Greek yogurt as the base for this sweet and tangy dressing.
It also makes a great dipping sauce for chicken strips! Honey mustard dressing is
easy to make and tastes so much better than the bottled versions.
Serve this garden fresh salad with some grilled chicken and roasted vegetables
and you have a quick, easy and delicious summer dinner!
Honey Mustard Salad Dressing
1/2 C plain fat-free Stonyfield Greek yogurt
1/4 C honey
1/4 C spicy brown mustard
juice of one lemon (about 2 T)
salt and pepper to taste
Combine ingredients in a bowl and whisk together.
Store in refrigerator until ready to serve.
