Homemade Birthday Cake Mini Donuts

Well we survived snow storm Jonas and finally got out of the house for a little today.
We were snowed since Friday afternoon, which really isn't that long, but it was still
nice to be able to get out to visit my parents and then grab a fountain Diet Coke from
my favorite convenience store.  Fountain drinks just taste so much better!

Our daughter Madison, her boyfriend and a college friend were all snowed in with us.  
We played games, baked cookies, ate too much, shoveled snow and made the cutest mini
donuts!

A couple of years ago my mom bought me a BabyCakes Mini Donut Maker, which I had 
never used.  Being snowed in seemed the perfect time to break it out.  We had so much fun
making these adorable mini donuts!  I definitely recommend putting the donut batter into
a piping bag to fill the donut molds.  It made the process so much easier than trying to spoon
it in.  At first we just dipped the donuts into glaze of confectioners sugar and milk, but then
the girls decided to get more creative and we tinted some of the glaze with Wilton Icing 
Color. I think they turned out so cute! I can't wait to make some for Valentine's Day!

Homemade Birthday Cake Mini Donuts

For the doughnuts:
2 C all-purpose flour
2 tsp. baking powder
2/3 C sugar
1 tsp. ground nutmeg (do not leave this out)
1 tsp. salt
1 C buttermilk
4 T butter, melted
2 tsp. vanilla
2 eggs
2 tsp. rainbow sprinkles

For the glaze:
2 C confectioners sugar
4 T milk
extra sprinkles
Wilton Icing Color, if desired

Preheat donut maker and spray lightly with cooking spray.  
If using a regular oven, preheat to 350 degrees.
In a large mixing bowl, whisk flour, baking powder, sugar, nutmeg and salt; set aside.
In a medium bowl, whisk buttermilk, butter, vanilla and eggs.  Pour wet ingredients
over dry, mixing just until combined.  Fold in sprinkles. Spoon batter into a large
piping bag. Pipe into donut molds, filling 3/4 full.  Using the BabyCakes Donut
Maker, we baked the donuts for about 4-5 minutes or until lightly browned.
If you are using  donut mold in the oven, it will take a little longer.
Place baked donuts on a wire  rack to cool.  Once the donut have cooled, mix
the confectioners sugar and milk in a small bowl and dip the tops of the donuts into
the glaze.  Add sprinkles if desired.

Makes approximately 36 mini donuts.
