Sometimes you need to be reminded of the beauty in your own backyard.

Over the weekend we met some friends for dinner on Skyline Drive in the Shenandoah
National Forest. We live in the heart of the Shenandoah Valley, just 25 minutes from the
entrance to Skyline Drive, however it's been years since we have been there.  Our friends
were visiting from North Carolina (hi Tom and Betsey!) and asked us to join them for
the evening.



We had such a nice time catching up with our friends, taking a mini hike on the
Appalachian Trail and enjoying a delicious dinner at Skyland Lodge.  As the sun was going
down we walked around the grounds of the lodge, talked and enjoyed the stunning view.

We are lucky to live in such a beautiful area and this weekend reminded me that we need
to slow down and enjoy it more often.







































On Sunday I tried a new paleo {grain free} pancake & waffle mix from Bob's Red Mill.
Instead of traditional pancakes, I made mini pale pancake muffins.  After filling a mini
muffin pan with the pancake batter, I inserted a fresh blackberry in the center of each
muffin and then baked them for about 10 minutes at 350°.

The muffins were delicious! I had a few taste testers out by the pool and they agreed!
The blackberries provided a pop of flavor and sweetness to the paleo pancake mix and
I love that they are bite size.

Blackberry paleo pancake mini muffins would be great to pack as a quick snack, while
hiking Skyline Drive the next time we go!

Blackberry Paleo Pancake Mini Muffins

1 cup Bob's Red Mill Paleo Pancake & Waffle Mix
2 large eggs
1/4 cup water
1 T coconut oil, melted
6 oz. container fresh blackberries
honey or maple syrup to drizzle

Preheat oven to 350°. Spray a mini muffin pan with cooking spray.
In a large mixing bowl, whisk to combine pancake mix, egg, water and coconut oil.
Using a mini cookie scoop, fill muffin tins with batter. Insert a fresh blackberry in
the center of the batter.  Bake for about 10 minutes.

Drizzle with honey or maple syrup if desired.

Yield - 22 mini muffins
