Mini Strawberry Bread Loaves for Holiday Gifting

I love surprising neighbors, friends, my favorite Sheetz Convenience Store girls and
our mailman with special treats from time to time. Baking is my love language and
there's nothing better than sharing that love with others. I've been known to leave treats
inside of our mailbox, at my neighbors front door and inside of their vehicles for them
to find the next morning. I'm sneaky like that!



































































Mini loaves of strawberry bread made with Stonyfield Greek yogurt and organic frozen
or fresh strawberries are perfect for gifting. Using yogurt in baked goods is a great way to
lighten up a recipe or to use as a substitute for sour cream or butter. I always keep a large
container of Stonyfield yogurt in our fridge for baking or making smoothies and
yogurt parfaits. Stonyfield has been our first choice in yogurt for years!












































This strawberry bread recipe is super easy and can be made in any size loaf pan.
Feel free to use one 9x5 inch pan or any size mini pans that you have. I love these fun
red and white polka dotted disposable pans for gifting. I made the loaves even more
festive by wrapping them in cellophane and pretty ribbon.

Mini Strawberry Bread Loaves 

2 cups all-purpose flour
1 tsp. baking soda
1/2 tsp. salt
1/2 cup granulated sugar
1/4 cup light brown sugar
1 large egg
1/2 cup Stonyfield Greek Yogurt (I used Vanilla)
1/2 cup buttermilk
1/3 cup canola oil
1 tsp. vanilla extract
1 cup strawberries, tossed in a tablespoon of flour (I used frozen berries)
sparkling sugar for sprinkling on top, if desired

Preheat oven to 350 degrees. Spray mini loaf pans with nonstick cooking spray.
The pans I used are 4.5 x 2.5 and I used 3 pans for this recipe. You could also use
one 9x5 loaf pan.

In a large mixing bowl, whisk together the flour, baking soda and salt. Set aside.
In another bowl, whisk together the sugars and egg. Add the Greek yogurt, buttermilk,
oil and vanilla extract. Pour wet ingredients into dry and stir just until combined.

Gently fold in the strawberries that have been coated with flour.
Divide batter between mini loaf pans or pour into one large loaf pan.

Bake for 30 - 45 minutes, depending upon the size of your pans or until a toothpick
inserted comes out clean.  Remove from oven to cool on a wire rack.

Wrap cooled loaves in plastic wrap or cellophane and decorate with ribbon.

Gift to neighbors, delivery drivers, the mailman or anyone who loves sweets.

  1. Ooh I love berries in my baked goods but don't think to use strawberries often enough! These loaves look fantastic!
