Quick & Easy Pumpkin Chocolate Chip Muffins

Happy September friends!
It's going to be 90 degrees here in Virginia today, but it will soon be time for warm cozy
drinks, hearty soups and all things pumpkin, so I'm sharing a quick and easy recipe AND
a fabulous new product to help get you prepared for fall.

If you're like me you own a Keurig coffee maker and a separate carafe coffee maker.
We use our Keurig most often, but it's nice to have a carafe coffee maker when my in-laws
come to visit or when entertaining a large group. Now I can save counter space because

Now that I have you craving a cup of coffee, how about a pumpkin chocolate chip muffin
to go with it. This recipe is so easy that you can enjoy a warm, delicious muffin in less than
30 minutes! All you need is a box of spice cake mix, a can of pure pumpkin and a few
chocolate chips.

Simply combine the three ingredients, spoon the batter into paper-lined muffin cups and
bake for 18-20 minutes or until a toothpick inserted come out clean.

What are you waiting for? Make some coffee and get baking!

Quick and Easy Pumpkin Chocolate Chip Muffins

1 box Spice Cake Mix
1 (15 ounce) can pure pumpkin puree
1/2 cup chocolate chips (I use Lily's Dark Chocolate Baking Chips)

Preheat oven to 350 degrees. Line a 12-cup muffin pan with paper liners.

In the bowl of a stand mixer combine cake mix and pumpkin puree, mixing just until
combined. Fold in chocolate chips.

Using a large cookie scoop, drop batter into paper liners. Sprinkle a few extra chocolate
chips on top if desired. Bake for 18 - 20 minutes or until toothpick inserted comes out clean.

Top with a dollop of chocolate ganache, berries and herbs if desired.

  1. That sounds like a really easy recipe I will try it! I can’t believe you don’t have to put eggs in it that is really great.
