The Perfect Cupcake

Over the years I have made a lot of cupcakes.  Margarita cupcakes, maple bacon cupcakes,
blueberry cupcakes and pumpkin cupcakes, just to name a few.

Sometimes I make cupcakes from scratch, but more often than not, I doctor up a box cake
mix.  To be honest, I prefer them this way.  Betty Crocker and Duncan Hines sell millions
of boxes of cake mix a year.  You know why?  Because they taste good!  

One of my favorite cakes is yellow cake from a box mix with chocolate frosting.  Yum!

In the past I have replaced 1 C water with buttermilk and used canola oil instead of butter,
and this way is delicious too, but most of the time I don't  have buttermilk in the fridge.
So lately I've been mixing 1/2 C of melted butter (not margarine!), 3 large eggs and one
cup of water with any flavor of boxed cake mix and the cupcakes taste delicious! The 
added butter help them taste more like homemade and the cake it light and airy.

Frost the cupcakes with your favorite buttercream frosting, add some sprinkles and
you have a perfect cupcake!
