Everyone who knows me well knows that I love Diet Coke®. I've been a fan for years!
There's just something about the delicious taste and that fizz that keeps me coming back
for more.

Many years ago, I heard that you could bake a low-fat cake by simply adding a 12-ounce
can of Diet Coke® to a box of chocolate cake mix. That's it. No oil, eggs or water needed,
just a can of diet soda and cake mix. Diet Coke® and chocolate - I was sold!

Do you have a go-to dessert?
You know, the dessert that you take to family reunions, holidays and picnics when you
don't have the time or energy to think of something else to make.

My go-to dessert is this chocolate trifle.  For years I made it in a glass trifle bowl.  If I'm
serving a large crowd, I make it in a punch bowl. I've even made it in a large glass jar,
but my favorite way to take chocolate trifle to a party is in this plastic bucket/jar thing
I found at Walmart! It has a handle and it's own lid, making it super easy to carry to any
type of event!

Banana Yogurt Snack Cake

So I was at my parents house the other day and my mom had four very ripe bananas
sitting on her kitchen counter.  I said "do you have plans for those bananas?" She
said "no, I'll probably just give them to the cows." Sorry cows, but those bananas
came home with me :)

Thanks to mom, my recipe today is for a banana yogurt snack cake.  You could totally
turn this recipe banana bread if you like, but I decided on a snack cake because one,
it bakes faster in a square baking dish and two, cake sounds better than bread :)

Cinnamon Bun Mini Cakes

When I was little I asked Santa for a Betty Crocker Easy-Bake Oven for Christmas.
I wanted that little oven so badly!
Mini boxes of Betty Crocker cake mix and tiny cake pans - I would have been in heaven!

Santa was good to me that year, but he never did come through with that Easy-Bake Oven.
My mom said I should just learn how to bake in a real oven and so I did.  Thanks mom :)
I cranked out cookies, brownies and cakes for my brothers and they were happy, but deep
down I still longed for that little oven that baked cakes with a light bulb.

University of Tennessee Graduation Party Cupcakes & Free Printable

Over the weekend I had to pleasure of making cupcakes and a dessert for a friend's
party she was hosting for her daughter's high school graduation.

Morgan will be attending the University of Tennessee this fall, so the party theme was
orange and white for the Tennessee Volunteers.  I made red velvet cupcakes with cream
cheese frosting and chocolate cupcakes with vanilla buttercream.  Keeping with the party
theme I decorated the cupcakes with Tennessee logo toppers and washi tape flags.

Strawberry Punch Bowl Cake

It's hard to believe that the month of May is almost over.
School is winding down around here and most high school graduations are next
weekend. Even though our daughter, Madison just finished her junior year at
James Madison University, we still received several high school graduation
announcements from our friends who have kids that are graduating this year.

Strawberry Punch Bowl Cake is a perfect dessert to serve for graduation parties, reunions
or family picnics.  It's easy to prepare and serves 20-25 people.  I made it three
years ago for Madison's graduation party and the punch bowl was empty in no time!

Iced Almond-Lemon Loaf Cake

Believe it or not, I didn't start eating yogurt until I was in my early thirties.
Which was just last week, by the way :)

Yogurt just wasn't something my mom ever brought home from the grocery
store, so I never really thought about it.

I have my husband to thank for introducing me to this creamy, delicious,
healthy goodness.  He has been a yogurt fan since he was young and he
often consumes 3-4 containers of Stonyfield yogurt a day!

Today I use yogurt in many of my recipes, so I was super excited when
my friends at Stonyfield sent me a copy of Yogurt Culture by Cheryl
Sternman Rule.

My brother's and I loved it!
It's such a light and refreshing cake and easy too since it's made from a boxed cake mix.

For Easter I decided to take a trip down memory lane and make Strawberry Jell-O Poke
Cake for our family get together.
Chilled whipped cream pudding frosting combined with fluffy white cake tastes so good
on a warm spring day!
Heck, who am I kidding - it tastes good any day!
