Fruity Chicken Salad

Turkey sandwiches are by far my favorite for lunch, but sometimes I switch it up and eat chicken..
I'm wild like that.

The great thing about chicken salad is you can add whatever you want. 
Don't like craisins? Leave them out.
Like green grapes instead of red?  That's fine too.
I don't like too much mayo on mine, so I keep it on the dry side, but you can add as much as you like :)
Get a little wild and crazy like me and make yourself some chicken salad soon.



Fruity Chicken Salad

4 Boneless Chicken Breasts
Half jar of Orange Marmalade
1 cup Red grapes, halved
1/2 cup Celery, chopped
1/2 cup Craisins
One Gala Apple, chopped into bite size pieces
1/2 cup slivered almonds
Light Mayonaise (I use Kraft Reduced Fat Mayo with olive oil)
Salt and Pepper to taste

Preheat oven to 350 degrees.  Place chicken breasts in a bake dish coated with cooking spray and spoon orange marmalade on top of chicken.  Bake in oven for about 45 minutes.  Let chicken cool and then chop into bite size pieces.  Mix with the rest of the ingredients and serve on a Sandwich Thin.  Enjoy!

Oatmeal Applesauce Bread

I love baking bread when I have time on Saturdays.  It makes the house smell so good, you get to have lunch time sandwiches on fresh bread and it makes the best french toast for Sunday mornings.
The recipe below lets you use your bread machine, which makes things even easier!  I don't like the size of the loaves that my bread machine makes, so I use the dough cycle and then take it out of the machine.
I place the dough in a loaf pan and let it rise for about a half hour or so, then bake in the oven for about
30 minutes at 375 degrees.

Note:  I didn't have dry milk powder, so I used 1/3 cup water and 1/3 cup milk instead of 2/3 cup water and it was fine.



Oatmeal Applesauce Bread

2/3 cup warm water
2 1/4 cups bread flour
1 T white sugar
1 T dry milk powder
1 tsp. salt
1 T butter, melted
1/4 cup rolled oats
1/4 cup applesauce
1/2 tsp. ground cinnamon
1 (.25 oz.) package active dry yeast

Place ingredients in the pan of the bread machine in the order recommended by the manufacturer.  Select cycle; press start.

Yummy Ham & Cheese Sandwiches

 
If you are looking for something easy and delicous to make for a church picnic, family reunion or any other type of pot luck, you need to make these yummy Ham & Cheese Sandwiches soon! It never fails....someone always asks me for the recipe every time I make them - I swear - they are that good! My friend Debbie brought them to our annual Christmas party a couple of years ago and I immediately asked her for the recipe - not sure where it originated, but here it is for your delicious enjoyment.

Yummy Ham & Cheese Sandwiches

1 package King's Hawaiian Rolls (12 rolls per pkg)
12 slices of Honey Baked Ham
12 slices of Provolone Cheese
3/4 stick of butter
2 T brown sugar
1/2 T French's Regular Mustard
2 T Worcestershire Sauce
1/2 T poppy seeds

Melt butter and mix with brown sugar, mustard, worcestershire sauce and poppy seeds. Brush the bottom of a 13 x9 inch baking dish with some of the sauce. Cut the entire package of rolls in half, horizontally and brush the inside of each roll with the sauce. Now add a slice of ham and a slice of cheese to each roll. Place them in the baking dish and brush the tops with the remaining sauce. Cover them tightly with foil and bake in a 350 degree oven for about 25 minutes.
