Mother's Day Brunch with Minted
This post is in partnership with Minted. As always, all opinions are 100% my own.
Thank you for supporting brands that make Me and My Pink Mixer possible.
Holiday's have a way of sneaking up on me.
Easter totally did this year.
I'm not sure why that is, but my goal for the rest of the year is to stay on top
of things and be prepared.
This year Mother's Day weekend will be super busy for us and exciting too because
both of our mother's will be here! Our daughter Madison graduates from college
that weekend, so all of our family will be here to celebrate. Since the day after the
graduation party is Mother's Day, I think a Mother's Day Brunch will be perfect.
Sunday, May 8th is also my birthday, so I want to keep things simple and relaxing
after all of the weekend excitement!
I like to keep party decor simple and classic, so I turn to Minted to help me host an
elegant get together. I am a list maker and note taker, so this beautiful, personalized
Minted color block notebook is perfect for writing notes about my menu plan, guest list,
grocery list and things I want to remember. The colors are so me!

Quinoa Coconut Pancakes
Happy Monday friends!
How was your weekend?
Mine was great - thanks for asking :)
The weather was beautiful here in VA, so we did a lot of yard work.
I have a blister from so much raking to prove it!
Sunday was a little more low key, so I decided to switch things up and I made
pancakes for breakfast.
I haven't made them foreverrrrrrrrrrr!

Cinnamon Roll Pops
You know how you go into Target for one or two things and come out with at least four or five?
Yeah, that happens to me ALOT!
Like this Nordic Ware cake pop pan for instance.
I went into the store for a couple of extra Easter goodies and it somehow ended up in my cart.
I did NOT need it, but I'm so glad I got it!
This cute little pan turned this

into this.
Aren't they adorable!
They were super easy to make!
Here's what I did:
Preheat oven to 350 degrees.
Spray both sections of the Cake Pop baking pan with cooking spray.
Open the packaged cinnamon rolls and slice each roll in half with a serrated knife.
Fold each half over so that the cinnamon toppings are together and place into the hole of the pan.
Once the pan is full, put the top on and place into the oven.
Bake for 9-10 minutes.
Remove the pops from the pan and let them cool on a wire rack.
Spoon cinnamon roll frosting into a plastic ziploc baggie. Microwave for 5-10 seconds to soften.
Cut a hole in the bottom corner of the plastic baggie and drizzle frosting over the pops.
Insert Wilton cake pop or lollipop stick.
I decorated the sticks with washi tape before I inserted them into the pops.
I love washi tape!
There you have it.
A quick and super cute idea for brunch or a baby shower.
