Mini No-Bake Cheesecake Parfaits
Hello there! It's been a minute since I've posted anything on this little blog of mine,
sharing on Instagram is so much easier, but this mini no-bake cheesecake parfait recipe
is a keeper, so I'm posting it so that I remember it for future bridal/baby showers or
other parties.
Our daughter is getting married next month and her sweet Maid of Honor hosted a bridal
shower for her a couple weeks ago. It was such a nice shower with so many cute details.
If I get my act together maybe I'll post some pictures soon.

University of Tennessee Graduation Party Cupcakes & Free Printable
Over the weekend I had to pleasure of making cupcakes and a dessert for a friend's
party she was hosting for her daughter's high school graduation.
Morgan will be attending the University of Tennessee this fall, so the party theme was
orange and white for the Tennessee Volunteers. I made red velvet cupcakes with cream
cheese frosting and chocolate cupcakes with vanilla buttercream. Keeping with the party
theme I decorated the cupcakes with Tennessee logo toppers and washi tape flags.

Fruit Pizza Cookie Cups
I love taking a favorite recipe and making it into cute, bite-size desserts.
I've been making fruit pizza forever, but when I needed something sweet to take to
church I decided mini fruit pizza cookie cups were the way to go.
No cutting or serving spoon needed.
Everyone can just grab a cookie cup or two :)

Mini Lemon Cupcakes with Lemon Cream Cheese Frosting
Happy Spring y'all!
The weather has finally warmed up here in Virginia and I am SO happy!!
I even painted my toes and broke out the flip flops.
Let's celebrate this nice weather with some mini lemon cupcakes :)
with Lemon Cream Cheese Frosting
Cupcakes:
1 box lemon cake mix
1 cup sour cream
1/2 cup water
1/2 cup canola oil
3 eggs
1 tsp. vanilla
zest of 2 lemons
Preheat oven to 350 degrees.
Combine all ingredients with an electric mixer for 2 minutes.
I used my small Pampered Chef scoop to fill my Pampered Chef mini muffin pan.
Bake mini cupcakes for 10-12 minutes or until cupcakes spring back when touched.
Cool on wire racks.
Lemon Cream Cheese Frosting:
1 pkg. cream cheese, softened
1 cup (2 sticks) butter, softened
juice of one lemon (about 2 T)
zest of one lemon (about 1 tsp.)
dash of salt
6 cups powdered sugar
In the bowl of a stand mixer, combine the cream cheese and butter until light and fluffy. Add in the lemon juice, vanilla, zest and salt and blend. Add the powdered sugar 1 cup at a time with the mixer on low setting. Increase the speed and whip until light and fluffy.
Frost cooled cupcakes.
I topped them with a handmade gumpaste flower.
Yield - 72 mini cupcakes
