Happy Monday sweet friends. My husband and I are just now coming down from a very
exciting weekend. Our one and only daughter, Madison, bought her very first house,
moved out of our house and got engaged! I'm still in shock over it all!

Roasted Vegetable & Blueberry Salad

I can't believe it's been over a year since I have attended a food blogger conference.
I've only been to a handful of them all together, but I really enjoy them when I
have the opportunity to go.  I learn so much from other bloggers and we have so
much fun together!

Next month is the Food and Wine Conference, which is held annually in Orlando
at Rosen Shingle Creek.  I would LOVE to attend this conference!  Wish Farms is
hosting a "blueberry toss" recipe contest and the person that wins the contest gets
to attend the conference and also wins a gift card and a flat of blueberries.
I would be in blueberry heaven!! I really want to go to this conference so I have
been racking my brain thinking of ideas!

My family and I eat blueberries daily.  They are so good for you and delicious too!  We
put them in smoothies, on our oatmeal, in salads, baked goods and eat them right out
of the container, so I didn't have any problem coming up with a blueberry salad recipe!

Oven Baked Sweet Potato Fries

so obviously I am a big fan of kitchen gadgets!  I was recently given the opportunity to

I don't know about you, but all of my knives were in dire need of a good sharpening
so I was super excited to try the Edge Grip Knife Sharpener.  It's unique design

it stable while sharpening knives right on your kitchen counter top.  My knives were
so happy to be sharp again!

Sweet Potato Puttanesca

With all of the hoopla on the internet about zucchini noodles and other spiralized
vegetables, I thought it was time to get on board and try these healthy noodles!
Spiralized Sweet Potato Puttanesca
























I used the OXO Good Grips Hand-Held Spiralizer to make sweet potato noodles for Sweet
Potato Puttanesca.  The OXO spiralizer is so easy to use and I love the fact that it is small
and doesn't take up much space in my kitchen drawer! It makes uniform curly noodles from
zucchini, carrots, cucumbers and more. I am such a fan of OXO products! They are the best!
The hand-held spiralizer is BPA Free and dishwasher safe too.

Winter Chicken Bake

I haven't posted many dinner ideas lately, so I thought I would share one of our favorites.
Winter Chicken Bake is an easy one dish meal that is perfect on a cold winter evening.
The flavor combination is delicious!
Sweet potatoes, onion, carrots, apples and chicken baked in a cranberry barbecue sauce.
I use fresh cranberries, but frozen would be fine too.
Not fond of sweet potatoes?  Use Russet or little red potatoes.
This dish has so many possibilities!

I usually serve Winter Chicken Bake with roasted green beans or broccoli.

Sweet Potato Chili and Whole Grain Yogurt Cornbread

Now that we have cooler weather here in Virginia,  I'm all about making soup or
chili for dinner. Good old comfort food at it's best!
Since my hubby and I don't eat red meat, I'm always trying to come up with new
ingredients to change up my go-to chili recipe.
Today I am adding garlic, sweet potatoes, lentils and Stonyfield yogurt to top it all off.

This month Stonyfield teamed up with Dreamfarm, giving me the opportunity to try
this awesome garlic press.  It's called a Garject Lite and it presses multiple garlic cloves
at once, without the need to peel them first.  How cool is that! I love how it cleans itself
as you open the handle!  The Garject Lite had the pressed garlic ready for my chili in

Mixed Potato Gratin

Today I am sharing one of the side dishes I made for Thanksgiving since my sister-in-law and cousin have both requested the recipe.  This is the second year I have made this cheesy potato dish - it's definitely a keeper!

I thought about making a sweet potato mash this year, but in the end I opted for the Mixed Potato Gratin once again. 
It may just become a new tradition.

I'm sure a mandoline would make slicing the potatoes much easier, but since I do not own one, I went the old fashioned route and used a knife :) 
Just make sure all of your slices are the same thickness so that the potatoes cook evenly.

This potato dish is the perfect side any time of year.

Mixed Potato Gratin

3 large Russet potatoes
3 large sweet potatoes
1 1/2 cups heavy cream
2 garlic cloves, minced
1 T minced fresh thyme
1 1/2 tsp. sea salt
1/2 tsp. freshly ground black pepper
1 1/2 cups shredded Gruyère cheese
3/4 cup shredded parmesan cheese
2 T butter, cut into small pieces

Peel all of the potatoes.
Using a mandolin, food processor or very sharp knife, cut them into 1/8-inch-thick rounds and place them in a bowl.
In another medium sized bowl. combine the cream, garlic and thyme and set aside.
Place 1/2 cup of the shredded gruyere cheese aside to use for the topping.
Spray a 9x9 baking pan with cooking spray and layer the potatoes, alternating colors in 1 even layer. Sprinkle the top of this layer with some salt and pepper, a little bit of gruyere cheese and a little bit of parmesan cheese. Repeat this process until you use up all the potatoes. I had about 4 layers.
Preheat oven to 400°F.
Pour the heavy cream over the mixture once all your layers are done. Sprinkle the top with the remaining gruyere cheese and dot it with butter.
Cover gratin tightly with foil and bake for 30 minutes. Remove the foil and bake for 25 minutes longer. Let it set for a few minutes before serving.
