Mother's Day Brunch with Minted

Holiday's have a way of sneaking up on me.
Easter totally did this year.
I'm not sure why that is, but my goal for the rest of the year is to stay on top
of things and be prepared.

This year Mother's Day weekend will be super busy for us and exciting too because
both of our mother's will be here!  Our daughter Madison graduates from college
that weekend, so all of our family will be here to celebrate.  Since the day after the
graduation party is Mother's Day, I think a Mother's Day Brunch will be perfect.

Sunday, May 8th is also my birthday, so I want to keep things simple and relaxing
after all of the weekend excitement!























I like to keep party decor simple and classic, so I turn to Minted to help me host an
elegant get together.  I am a list maker and note taker, so this beautiful, personalized
Minted color block notebook is perfect for writing notes about my menu plan, guest list,
grocery list and things I want to remember.  The colors are so me!

































Succulents are really popular right now and I love them, so I turned to my
neighbor, Pam of Landscapes In Miniature, to make small arrangements for my
center piece and table decor.  Pam makes adorable miniature gardens. I think the
succulents look so pretty on the Minted milk glass cake plate.























You don't have to make a ton of food to host a brunch get-together.  Just a few easy dishes,
mimosas and good friends and family are all you need. Keeping with my simple theme,  I
made silver dollar buttermilk pancakes, fresh fruit kabobs, banana yogurt snack cake and
yogurt cups.






















I served the silver dollar buttermilk pancakes and yogurt cups on Minted modern white
cake plates.  White serving pieces are my favorite because they go with everything and
work for any occasion.























I love the classic look of the walk the line table runner.  For the first time ever I finally
own a table runner that actually fits my dining room table and I couldn't be happier!






















I adorned our dining room mirror with sea glass felt garland to add a little festive flair
to that side of the room.









































My banana yogurt snack cake is delicious and healthy for breakfast or brunch!






















Modern marble circle garlands decorate the window treatments and add a touch of color.






















Don't let holidays sneak up on you.  Mother's Day will be here before we know it.

Silver Dollar Buttermilk Pancakes

1 C all-purpose flour
2 T sugar
1/2 tsp. baking soda
1/2 tsp. salt
1 tsp. baking powder
3/4 C low-fat buttermilk
2 T butter, melted and cooled
1 large egg
cooking spray

Heat griddle to 350 degrees.  In a large mixing bowl, whisk together flour,
sugar, baking soda, salt and baking powder.  In a separate bowl, whisk together
the buttermilk, butter and egg.  Add wet ingredients to the dry, mixing just until
combined.

Lightly spray the griddle with cooking spray.  Using a small cookie scoop or
spoon, drop batter onto the hot skillet.  Cook until bubble appear on the top and
edges harden a bit.  Flip with a spatula and cook until the other side is browned.
Serve warm with butter and syrup.
