Mini Bundt Cakes are perfect for Easter Sweets Week because they're just so darn cute and
delicious! I use a doctored up box cake mix to save time, but feel free to use your favorite
homemade cake mix recipe if that's your thing.  For Easter I topped the cakes with vanilla
buttercream, fresh strawberries, mini chocolate chips and pansies from my deck garden.
I love using fresh flowers to decorate baked good and pansies are edible too!

Mini Bundt Cakes

Mini Bundt Cakes

1 box white cake mix plus ingredients on box to make cake
1 cup mini chocolate chips, tossed in 1 T flour

Preheat oven to 350 degrees. Spray mini bundt pans with floured cooking spray.
Prepare cake as directed on package.
Gently fold quartered cookies into the cake batter.  Spoon batter into prepared
mini bundt cake pans.

Bake for 12-15 minutes or until a toothpick inserted comes out clean.
Remove from oven and let the cakes cool in the pan for a few minutes before
removing cakes to a wire rack to continue to cool.

Frost cooled bundt cakes with buttercream frosting. Top with fresh strawberries,
mini chocolate chips and fresh flowers.

Yield - 12 mini cakes

Vanilla Buttercream Frosting:
1/2 cup unsalted butter, at room temperature
1-2 T milk or heavy cream

In the bowl of a stand mixer fitted with the paddle attachment, beat the butter on
medium speed until smooth. Turn the speed to low and slowly add the powdered
sugar until it is completely mixed in. Add vanilla and heavy cream. Turn the mixer
up to medium speed and mix for 2-3 minutes or until light and fluffy.
