Slow Cooker Chicken Fajitas and a Giveaway

Now that the weather is cooler here in Virginia, there's nothing like coming home from
work to the smell of a nice, warm dinner ready and waiting in my Hamilton Beach Slow Cooker.

Like most families, our fall schedules are crazy busy.  My husband and I both work
outside of the home.  He also helps coach football at our local high school, so when
he finally gets home in the evening he's pretty hungry!
My slow cooker is a life saver!



The Hamilton Beach Set & Forget Programmable Slow Cooker has three choices for
easy, automatic cooking, program, probe and manual mode.


Program mode is so convenient for those busy days when I'm not quite sure when I will
be home.  Just program the time and when it's up, the slow cooker automatically changes
the setting to warm.  How great is that!





















This recipe for Slow Cooker Chicken Fajitas couldn't be easier.
Just place everything in the slow cooker that morning and when you get home
that evening dinner is ready!

When the chicken is done you can leave the breasts whole if you like, but I prefer
to shred the chicken with two forks and spoon the spicy goodness into warm tortilla shells!





















Most of the time I serve the fajitas with rice and black beans, but they are totally fine
on their own.  Slow Cooker Chicken Fajitas are also yummy served over tortilla chips!

























Slow Cooker Chicken Fajitas

1 lb. boneless chicken breasts
1 pkg. fajitas seasoning mix
1 small onion, sliced
1 red pepper, cut into strips
1 green pepper, cut into strips
1/2 C salsa
flour tortillas
optional toppings: cilantro, sour cream, shredded cheese, tomatoes

Spray slow cooker with cooking spray.
In a small bowl, combine salsa and fajitas seasoning packet; set aside.
Place the chicken, onion and peppers in a Hamilton Beach Set & Forget 6 qt.
Programmable Slow Cooker.  Pour the salsa and seasoning mixture over the chicken and
peppers. Cover with a lid and cook 6-7 hours on low or about 4 hours on high until
chicken is cooked through.  Using two forks, shred chicken into bite-size pieces.
Spoon mixture into tortillas and add toppings.

  5. Would love to win this!! My favorite slow cooker meal is my deer roast recipe - you use an envelope of Lipton Onion Soup mix, a can of cream of celery soup, a can of water, potatoes and carrots - You can do this with beef as well!

  9. 1 lb dried black beans (2 cups), sorted, rinsed 1 large onion, chopped (1 cup) 1 large bell pepper, chopped (1 1/2 cups) 5 cloves garlic, finely chopped 2 dried bay leaves 1 can (14.5 oz) Muir Glen™ organic diced tomatoes, undrained 5 cups water 2 tablespoons olive or vegetable oil 4 teaspoons ground cumin 2 teaspoons finely chopped jalapeño chilies 1 teaspoon salt 3 cups hot cooked rice

    Directions

    1In 3 1/2- to 6-quart slow cooker, mix all ingredients except rice.
    2Cover; cook on High heat setting 6 to 8 hours.
    3Remove bay leaves. Serve beans over rice. This recipe was tested in slow cookers with heating elements in the side and bottom of the cooker, not in cookers that stand only on a heated base. For slow cookers with just a heated base, follow the manufacturer’s directions for layering ingredients and choosing a temperature.

    I love this product and want one so it will potentially save my life! I can start setting a timer to have a good healthy dinner waiting on us when we get home! I'm always to scared to leave the crock pot going during the day! This makes for crazy rushed nights!

  27. My favorite slow cooker recipes are the ones I actually REMEMBER to turn on! Seriously, the last time I used my slow cooker, I forgot to set it so when I came home from work we had room-temp pot roast (which I ended up having to throw away!) This slow cooker sure would solve that problem for me!
