Today I'm sharing a recipe for homemade angel food cake with whipped cream and
sugared berries.  This is actually the first time I've ever made homemade angel food
cake! I have been wanting to give it a try forever, but was intimidated by the entire
dozen of egg whites. #SummerDessertWeek gave me the courage to give it a go and
I may never go back to boxed angel food cake again! The difference in taste between
boxed angel food cake and homemade is amazing!

Angel food cake with whipped cream and sugared berries is a perfect summer dessert!
It's light, sweet and so delicious! It makes such a pretty presentation for family reunions,
showers or any summer celebration!

I chose fresh Rainier blueberries, raspberries and blackberries for topping, but the options
are endless. Fresh peach slices and bing cherries would look pretty also. I love the look
of the sugared berries! You can find the tutorial I used here.

After taste testing the first slice, I took the rest of the cake, along with plastic plates and
forks, outside to our cul-de-sac for an impromptu block cake party. My neighbors were
out working in their yard's and loved the sweet distraction :) Summer time is the best!

Homemade Angel Food Cake with Sugared Berries





















Homemade Angel Food Cake with Sugared Berries

1 3/4 cups Dixie Crystals granulated sugar
1/4 tsp. salt
1 cup cake flour, spooned and leveled (I made my own using all-purpose flour)
12 eggs whites, room temperature
1/3 cup warm water
1 tsp. Adams vanilla extract
1 1/2 tsp. cream of tartar

Preheat oven to 350 degrees.
Blend sugar in a food processor until sugar becomes very fine.

In a medium mixing bowl, combine cake flour, salt and half of the fine sugar.
Sift together and set aside.

Combine egg whites, water, vanilla and cream of tartar in a large bowl. Whisk
ingredients by hand for 2 minutes until well combined.

Pour egg white mixture into the bowl of a stand mixer. Using the whisk attachment,
beat egg white mixture, gradually add the remaining half of the sugar.
Beat until medium peaks are formed (5-7 minutes).

Sprinkle some of the flour mixture over the egg white mixture.  Gently fold in.
Repeat until all of the flour mixture has been stirred in evenly.  Spoon mixture
into an ungreased tube pan.  Bake at 350 degrees for 35 minutes or until golden
brown in color and the cake has cooked through.

Invert cake pan and cool upside down until completely cooled.
Once cooled, using a knife or spatula, carefully scrape edges from sides and
remove cake from pan.

Top with whipped cream and sugared berries.

Enjoy!
