Pasta with Shrimp, Olive Oil, Garlic and Chili Flakes

Shrimp Pasta








































Hey friends! It's been awhile since I've shared a dinner recipe around here, so today I'm
sharing a shrimp and pasta entree that is so delicious! It's pretty easy too -  cleaning
the shrimp is the hardest part!

The ingredient list is pretty minimal, which I love - especially for a weeknight dinner!
Shrimp, pasta, tomatoes, fresh spinach, a few spices and extra virgin olive oil is all
you need.



I use European extra virgin olive oil almost every day - it's a pantry staple for sure.
Sometimes I use it instead of butter when baking bread or cakes.  Have you ever stopped
to think about where the olive oil that you use comes from? The olive tree has been revered
in Europe for thousands of years - farmers have evolved hundreds of varieties of olive trees
and optimized them for different environment conditions - producing the most delicious

I never realized how many different types of extra virgin olive oil were available! So many!
For this recipe I used two different types of European extra virgin olive oil - one for the
shrimp and another one recommended for pasta. Both are delicious.









































This dinner is light and delicious - perfect for weeknights when you're trying to get dinner
on the table quickly so that you can make and taste test Christmas cookies!

Shrimp and Pasta

Pasta with Shrimp, Olive Oil, Garlic and Chili Flakes

7 ounces whole grain spaghetti or other shaped pasta
3 small garlic cloves, minced
1 1/2 tsp. chili pepper flakes
4 T extra virgin olive oil
3/4 tsp. salt
8 ounce cooked prawns
2 tomatoes, with the skin removed and diced
1/2 tsp. freshly ground black pepper
Handful of baby spinach leaves
Freshly grated parmesan

Cook pasta according to package directions.

Stain pasta and return to the saucepan over low heat.
Add the minced garlic, chili pepper flakes, olive oil, cooked shrimp, tomatoes,
salt and pepper and mix together well.  Place in a serving dish and scatter over the
spinach and Parmesan cheese.

Serve warm in bowls.

Serves 4.
