Corn Dip




It's the first day of fall and that means football season is well under way.
Personally I'm not really that much into the game, but I do love to tailgate and I do
love football food!

I've teamed up with some of my foodie friends to bring you 19 football tailgating
recipes perfect for game day!  Last year I shared our favorite bacon wrapped tater tots,
easy pepperoni rolls and game day cookie cups.  Today I'm sharing our favorite corn
dip recipe. This recipe for corn dip is super easy to prepare and everyone loves it!
I like to serve it with tortilla chips or corn chips - either way it's delicious!

2014 has been a good year for Me and My Pink Mixer and to celebrate I would like
to share my most viewed recipes of the year.
Some of the posts were from a few years back, so please forgive my photography
skills back then :)

One thing I have learned from checking these stats is that you all still love
cupcakes!

Green Giant Veggie Chips and Texas Caviar






















I don't eat chips too often, but when I do I want them to be as healthy as a chip can be.
Recently I was given the opportunity to try new veggie chips from Green Giant.
Roasted veggies and sweet potatoes in a multigrain chip.
Now that's a chip I wouldn't feel too guilty about eating!

I was sent Garden Ranch Roasted Veggie Tortilla Chips and Barbecue Multigrain Sweet Potato Chips.
First I tried the barbecue sweet potato chips.



















They went perfectly with my veggie wrap.  I loved the barbecue flavor and the crunch!
I think these were my fave, although when I tried the tortilla chips with my Texas Caviar, they were pretty tasty too! I'm pretty sure I'll have no problem finishing off both bags!!



















Texas Caviar

1 can black beans, drained and rinsed
1 can black-eyed peas, drained and rinsed
I can corn, drained
1/2 purple onion, chopped
1 cucumber, chopped
1 green pepper, chopped
1 large jar of salsa
fresh cilantro, chopped

Mix all ingredients in a large bowl.
Serve with tortilla chips.

Overall I was very impressed with the flavor and nutritional value of the chips.
I will definitely buy them in the future when I am shopping for chips.
If you would like to try them, look for the green bag in the snack aisle of your grocery store.
They are also available in Zesty Cheddar and Sea Salt.

Funfetti Dip

So I hosted a girl's night/Thirty-One deck party at my house this week.
Sangria, tote bag shopping, girlfriends and a warm summer evening.
What a great Tuesday night!

Girl's night is the perfect opportunity to try new recipes.
You have a lot of guinea pigs and they give you honest opinions!
This one was definitely a winner - the bowl was empty at the end of the evening and everyone was asking how to make it.  It could not be any more simple with only 3 ingredients!
 
Funfetti dip is obviously not high on the nutrition scale, but fat-free yogurt, lite cool whip
and fat-free animal crackers make it a pretty low calorie sweet treat.
And it tastes like you're licking cake batter right out of the bowl!

Funfetti Dip
 
1 box Funfetti cake mix
2 cups fat-free plain yogurt
1 cup Cool Whip Lite
Fat Free Animal Crackers or Graham Crackers
 
Combine cake mix, yogurt and Cool Whip in a large bowl.
Whisk together until completely combined.
Cover and place in the fridge to chill for at least 4 hours before serving.
Serve with animal crackers or graham crackers.
 
Note:  This makes a lot of dip.  I halved the recipe using a little over a cup and a half of cake mix.
Use the leftovers to make it again later or try Cake Batter Rice Krispie Treats or Cake Batter Blondies!

Toffee Fruit Dip

My friend Ashley made this fabulous dip for the baby shower we recently hosted.
I love the addition of the toffee bits - sweetness and crunchiness combined :)

It's a perfect dip for apple slices - give it a try!































Toffee Fruit Dip

1/2 cup light brown sugar
8 oz. cream cheese, softened
1 (10oz.) bag Heath Toffee Bits
1 tsp. vanilla
1/4 cup sugar

Mix all ingredients (except toffee bits) together with an electric mixer.
Add toffee bits.
Chill.  Serve with apple slices or other fruit.
