Bisquick Pumpkin Pancakes

I was in the mood for pancakes this weekend, but had used all of the flour in the house last time I had baked snickerdoodle cookie tarts.  Note to self - add flour to the grocery list.

Anyway, after searching around the pantry I did find some Heart Smart Bisquick - score!
The pancakes turned out delicious and I will definitely make them again soon.
Who knew Bisquick could be so handy to have around :)

Bisquick Pumpkin Pancakes

1 1/4 C Heart Smart Bisquick
1 1/2 T brown sugar
1 1/4 tsp. pumpkin pie spice
1 egg
1 C buttermilk
1 T canola oil
1/2 C pumpkin puree (I used Libby's)

Heat pancake griddle to medium heat (I put mine on 350).
In a medium mixing bowl, combine Bisquick, brown sugar and pumpkin pie spice.
In a small bowl whisk together egg, buttermilk, oil and pumpkin puree.
Add wet ingredients to dry, stirring just until combined.

Spoon batter onto the hot griddle, using approximately 1/4 cup per pancake.
Brown on both sides and serve.
Makes 6-7 pancakes.
