Welcome to day four of #SummerDessertWeek where a few of my blogging friends
and I are sharing some of our favorite summer desserts. On Monday I posted a
quick, easy and delicious recipe for mini blueberry galettes - you should give them a try!

Yesterday I shared mini angel food cake baked in a loaf pan. Today I'm sharing one of
my favorite ways to use angel food cake in a dessert - Raspberry Rosé Parfaits. First I
made a simple syrup using rosé wine and Dixie Crystals sugar and then I added frozen
raspberries. The combination tastes amazing and would also be fantastic served over
vanilla ice cream!

Next I layered cubed angel food cake, raspberries and whipped cream in these beautiful
etched glasses from Susquehanna Glass. So simple, yet elegant too.
A perfect dessert for any summer get together!

Raspberry Rosé Parfaits #SummerDessertWeek





















Raspberry Rosé Parfaits

1 prepared angel food cake
1 cup Rosé wine
1/4 cup Dixie Crystals granulated sugar
3 cups fresh or frozen raspberries
1 3/4 cup heavy whipping cream
1/2 cup Dixie Crystals powdered sugar
1 tsp. Adam's vanilla extract

Cut angel food cake into 1-inch cubes; set aside.

Combine Rosé and granulated sugar in a small saucepan over medium heat 
and stir. Bring mixture to a slow boil and cook until liquid is reduced to about
half a cup. Remove from heat and add raspberries; stirring to combine.
Set aside and allow to cool completely.

Prepare whipped cream by beating heavy whipping cream, powdered sugar
and vanilla extract in a stand mixer. Beat until stiff peaks form.

To prepare parfaits, gently press angel food cake cubes into the bottom of 6 trifle
glasses or stemless wine glasses. Top with raspberry sauce and whipped cream.
Top with fresh berries and mint if desired.
Serve immediately.
