Mini Banana Protein Muffins





















These mini banana protein muffins may not be the cutest little baked goods on the
block, but they are healthy, delicious and perfect for breakfast on the go or as a guilt
free snack any time of day!



I pack 2 or 3 mini muffins in a ziplock bag and take them to work for my mid-morning
snack. They are also delicious crumbled over vanilla yogurt!

Mini Banana Protein Muffins

2 medium ripe bananas, mashed
1/4 C coconut flour (I use Bob's Red Mill)
1 scoop vanilla protein powder (I use Bob's Red Mill)
2 T melted coconut oil
1 large egg
1/2 T honey
1/4 tsp. baking soda

Preheat oven to 350 degrees.  Spray a mini muffin pan with cooking spray.

In a medium bowl, combine all ingredients.  Bake for about 12 minutes or until
lightly browned.  Allow muffins to cool in the pan for 5-10 minutes before removing
them from the pan.

Makes 12-15 mini muffins depending upon the size of your muffin pan.
