Hot Chocolate Cupcakes

Only 4 more days until Christmas!  Are you ready?
I'm not!
I still have wrapping, cleaning and lots of baking to do.
Good thing the weekend is almost here!

If you're looking for something new for your dessert table, Hot Chocolate cupcakes are a perfect wintery treat. Chocolate cake topped with hot chocolate frosting and garnished with tiny marshmallow bits and fudge drizzle - yum!


















Hot Chocolate Cupcakes
Cupcakes:
1/2 cup plus 1 T Dutch-process cocoa powder
1/2 cup plus 1 T hot water
2 1/4 cups flour
3/4 tsp. baking soda
3/4 tsp. baking powder
1/2 tsp. salt
2 sticks plus 1 T unsalted butter, at room temperature
1 2/3 cups sugar
3 large eggs, at room temperature
1 T vanilla extract
3/4 cup sour cream

Preheat oven to 350 degrees.  Line cupcake pan with paper liners. 
In a large mixing bowl whisk together flour, baking soda, baking powderand salt; set aside.
In a small bowl, combine cocoa powder and hot water and whisk until smooth.
Combine the butter and sugar in a saucepan over medium heat.  Cook, stirring occasionally, until the mixture is smooth and butter is completely melted.  Transfer the mixture to the bowl of an electric mixer and beat on medium-low speed until the mixture is cool, about 4-5 minutes.
Add the eggs one at a time, mixing well after each addition and scraping down the sides of the bowl as needed.  Blend in the vanilla and then cocoa mixture until smooth.  With the mixer on low speed, add the flour mixture in three additions alternating with the sour cream, beginning and ending with the dry ingredients and mixing each addition just until incorporated.

Using a large cookie scoop fill prepared liners with batter, using one scoop per cupcake.  Bake about 18-20 minutes, rotating the pan halfway through baking.  Let cool in pan about 5 minutes, then transfer to a wire rack to cool completely.

Hot Chocolate Frosting:
2 sticks (1 cup) butter, at room temperature
3 cups powdered sugar
1 package hot cocoa mix
1-2 T heavy cream
1 tsp. vanilla extract

In the bowl of an electric mixer, cream together the butter, powdered sugar and vanilla for 2-3 minutes on med-high speed.  Lower the speed and add the hot cocoa mix and milk. Beat for another 3-5 minutes until light and fluffy. Frost cooled cupcakes.  (I use a Wilton 1M tip to frost my cupcakes)
 
Garnish with Jet-Puffed Mallow Bits and fudge drizzle.

Chocolate Chip Cookie Cupcakes

I'm sharing my Cold Stone Creamery Hot for Cookie Chocolate Chip Cookie Cupcakes.

Say that five times fast :) 

I replaced the water in the cake mix and milk in the frosting with Hot for Cookie creamer to give it that extra cookie taste.

It tastes especially delish in the frosting!

Chocolate Chip Cookie Cupcakes

Cake:

1 box Devil's Food Chocolate Cake 

1 cup ID Cold Stone Creamery Hot for Cookie creamer

4 eggs

1/2 cup canola oil

Preheat oven to 350 degrees.
Place cupcake liners into cupcake pan.
In a large mixing bowl combine cake mix, eggs, coffee creamer and canola oil with an electric mixer.
Beat for 2 minutes; occasionally scraping the sides of the bowl.
Using a large cookie scoop, drop batter into liners.
Bake for 18-20 minutes or until toothpick inserted comes out clean.
Place cupcakes on a wire rack to cool.

While cupcakes are cooling, make your frosting.

Frosting:

Vanilla Buttercream

3 sticks unsalted butter, at room temperature
6 cups confectioners sugar
1-2 T Hot for Cookie coffee creamer
1 1/2 tsp. vanilla extract

mini chocolate chips and mini chocolate chip cookies for garnish

In the bowl of your stand mixer add butter and beat for about 1 minute.
Add confectioners sugar one cup at a time.
Add creamer and vanilla extract and beat until light and fluffy, about 4-5 minutes.
Place frosting into a piping bag.  I use a Wilton 1M tip.
Pipe frosting onto cooled cupcakes. 
Top with a mini chocolate chip cookie.
Makes 24 cupcakes.

Ultimate Hot Chocolate

I saw this recipe for Hot Chocolate about a week ago on Our Best Bites and thought I would give it a try. I made it on Friday evening to take with me to the High School Football game. It kept me nice and warm while I watched my daughter cheer her school on to victory. It also tasted much better than the powdered stuff they sell at the concession stand! Sunday was also their school Sports Awards Banquet, so I decided to make cupcakes with my handmade cupcake toppers - I think they look so cute and really add something special to a party or event.
Ultimate Hot Chocolate
from My Best Bites
2 - 1 oz. squares of unsweetened baking chocolate
1 - 14 oz. can sweetened condensed milk
4 c water
1 tsp vanilla
In your microwave or in a small saucepan over medium heat, heat the chocolate and the sweetened condensed milk until the chocolate is completely melted (about 2 - 2 1/2 minutes in the microwave). Whisk in vanilla, combine completely and set aside.
In a larger sauce pan, bring 4 cups water to a boil. Remove from heat and whisk in chocolate mixture. Serve with a dollop of whipped cream and a sprinkle of cinnamon if desired. Serves about 6.

Rolo Cupcakes

My mini candy obsession continues with Rolos this time.
Chocolate, caramel and more chocolate - yum!


















Cupcakes:
Hershey's Perfectly Chocolate Cake recipe or use your favorite box mix
1 bag Rolo minis
Hershey's Hot Fudge Sauce
Hershey's Caramel Sauce

Preheat oven to 350 degrees and place liners in cupcake pans.
Follow directions for Hershey's Perfectly Chocolate Cake for cupcakes.

While cupcakes are baking, pour some caramel sauce (about 3/4 cup)  into a measuring cup or bowl and heat in the microwave for 30-40 seconds.  Stir.  Pour the warm caramel into a Wilton squeeze bottle.
As soon as the cupcakes come out of the oven, inject caramel into the center of each cupcake.
Let them completely cool before frosting.

Vanilla Buttercream

3 sticks unsalted butter, at room temperature
6 cups confectioners sugar
1 T whipping cream
1 tsp. vanilla extract

In the bowl of your stand mixer add butter and mix for about 1 minute.
Add confectioners sugar one cup at a time.
Add whipping cream and vanilla extract and beat until light and fluffy.
Pipe frosting onto cooled cupcakes.
 
Top with a Rolo mini and drizzle with caramel and chocolate fudge.

Mixed Food Bloggers Conference 2013

 Last weekend I had the opportunity to attend the Mixed Food Bloggers Conference again,
held at the beautiful Mountain Lake Resort in Pembroke, VA.

Mixed was organized by these two amazing women, Paula of Bell'alimento
and Susan of Doughmesstic

Reese's Pieces Cupcakes

It's Super Bowl Sunday and my nephew's have requested something sweet for the party my brother and sister-in-law are hosting, so I made Reese's Pieces Cupcakes. 

You can't go wrong with the combination of chocolate and peanut butter!

I went the easy route today and doctored up a box mix.  Don't hate :)



Reese's Pieces Cupcakes

Cupcakes:
Duncan Hines Devil's Food cake mix
4 eggs
1/2 cup canola oil
1 cup buttermilk

Preheat oven to 350 degrees and line two cupcake pans with baking cups.
I use brown baking cups from Simply Caked.
Blend cake mix, eggs, oil and buttermilk at low speed for about 30 seconds.
Beat at medium speed for 2 minutes.
Fill baking cups 2/3 full.  Bake 18-20 minutes or until inserted toothpick comes out clean.
Cool on wire rack.
Makes 24 cupcakes.

Peanut Butter Frosting:

1 cup creamy peanut butter
8 T unsalted butter, at room temperature
1/4 tsp. salt
1 tsp. vanilla extract
4 cups powdered sugar
3 T milk or cream

Cream together peanut butter and butter in a stand mixer.
Beat on medium-low speed to combine.  Add the remaining ingredients and combine again.
Beat on high for 2-3 minutes until frosting is light and fluffy.
Add more milk if desired to get your desired spreading or piping consistency.
Frost cooled cupcakes.  I use a Wilton 1 M tip.

Garnish:
Place Hershey's Hot Fudge Sauce in a small glass bowl for about 20 seconds.
Pour into a Wilton Squeze bottle and let it cool for about 5 minutes.
Drizzle chocolate sauce over cupcakes and garnish with Reese's Pieces candy.

Pumpkin Cupcakes with Cinnamon Buttercream Frosting

My co-worker, Pat loves pumpkin, so I made these cupcakes for her birthday last week.
She is super sweet and I appreciate all she does for me!

The chocolate drizzle adds just the right touch and makes the cupcake taste kind of like a
pumpkin chocolate chip cookie. 

Make some for someone sweet in your life :)


Pumpkin Cupcakes with Cinnamon Buttercream Frosting

Cupcake:
1 box spice cake mix
1 cup canned pure pumpkin
1/2 cup buttermilk
1/3 cup oil
4 eggs
2 tsp. ground cinnamon
1/2 tsp. ground nutmeg

Preheat oven to 350 degrees and place liners into cupcake pan.
Sift cake mix and spices into a large mixing bowl.  Add remaining ingredients and mix with an electric mixer until combined.  Using a large cookie scoop, drop batter into cupcake liners.  Bake for 18-20 minutes or until toothpick inserted comes out clean.  Remove from pan and cool on a wire rack.

Cinnamon Buttercream Frosting:

2 sticks unsalted butter, softened
4-5 cups powdered sugar
1 tsp. vanilla
1 tsp. ground cinnamon
1-2 T heavy cream or milk

In the bowl of an electric mixer, cream together the butter, powdered sugar and vanilla for 2-3 minutes on med-high speed.  Lower the speed and add the cinnamon and milk. Beat for another 3-5 minutes until light and fluffy. Frost cooled cupcakes.  (I use a Wilton 1M tip to frost my cupcakes)
 
For fudge drizzle - Pour 1/2 to 3/4 cup of hot fudge sauce (I use Hershey's) into a bowl and microwave for about 15-20 seconds.  Pour it into a Wilton plastic bottle with tip.  Let it cool for about 5 minutes before drizzling over cupcakes.

Mom and Dad's 50th Wedding Anniversary Party

On June 11, 2010 my parent's celebrated their 50th Wedding Anniversary.  My brother's and I, along with our spouses and children, planned a party to recognize their special day.  We invited about 120 friends and family and almost all of them were able to attend! 


We decided to keep the decorations simple and elegant, so we used gold, silver and white for our color scheme.  My girlfriends and I had so much fun making 50 of these tissue paper flowers to hang from the ceiling.  Here is a close up of the flowers, I think they turned out really pretty.  I found a great tutorial here.

This is the table we had set up at the entry way.  My friend Karen spray painted branches from her yard with gold spray paint and then we hot-glued silver and white doves to the branches.  We had guests sign this great Happy Anniversary plate I found one day at TJ Maxx.  By the end of the night it was full of signatures!

This is me at the Dessert Buffet.  I made Vanilla Oreo Truffles, Cookie Dough Truffles, Chocolate Cupcakes with Peanut Butter Frosting, Strawberry Cupcakes, Vanilla Cupcakes and Lemon Cupcakes.  Recipes to come soon!
My sister-in-law, Michelle, made the delicious mini cheesecake squares. 


We used some of the tissue paper flowers to hang from more gold branches at the food table to make it more festive.
We served shrimp platters, mini country ham biscuits, meatballs, boneless chicken strips, cheese & crackers, fruit trays with dip, veggie trays with dip, spinach dip served in a bread bowl and texas caviar with tortilla chips.  My two sister-in-laws and I did all of the food ourselves.  My fantastic friends, Karen, Kristy and Bekka helped us serve drinks, replenished the empty serving plates and helped us clean up.  Aren't friends wonderful!

The night was so fun and my parents had a great time dancing and visiting with friends and family.
They are wonderful parents and we love them so much!
