Frozen Steel Cut Oatmeal Cups {Meal Prep}

Now that September is here and school is back in session, I find myself in meal planning
mode.  I don't mind winging it for the most part during the summer months, but come
fall I like to get organized and be prepared for chilly mornings when I crave something
warm to start my day.























If you follow me on Instagram or have been reading my blog for awhile, you are fully
aware of my love of oatmeal.  If you're new here, then let me explain. I LOVE oatmeal.
I mean really, I do!  Baked, microwave, instant, overnight oats - I love it all!






















On a cool, fall morning there is nothing better than a warm bowl of oats.
Steel cut oats are one of my favorites, so I plan ahead by making frozen steel cut
oatmeal cups to keep handy in the freezer.  First I make a batch of Bob's Red Mill
Gluten-Free Steel Cut Oats.  When the oats have finished cooking, I use a cookie
scoop to fill a muffin tin with the prepared oats.  Then I place the muffin tin in the
freezer for several hours or overnight for the oatmeal cups to freeze.






















Once frozen, I use a butter knife to pry the oats out of the cup.  You may want to leave
the muffin pan on the counter a few minutes to make them easier to remove.






















Store frozen steel cut oatmeal cups in a plastic freezer bag until ready to use.

When ready to eat, pop two steel cut oatmeal cups into a microwave safe bowl and
heat for about 2 minutes.  Stir and then add your favorite oatmeal toppings.

Frozen Steel Cut Oatmeal Cups {Meal Prep}

1 C Bob's Red Mill Steel Cut Oats
3 C water
dash of salt

In a medium saucepan, bring water and salt to a boil.
Add steel cut oats and stir.  Cover pan and reduce temperature to low.
Simmer for 25-30 minutes.  Remove from heat and let oats sit for 10 minutes.

Using a large cookie scoop, fill muffin tins with steel cut oats.
Place the muffin tin in the freezer for several hours or overnight.
Remove pan from freezer and let it sit on the counter for a few minutes.
Using a butter knife, gently pop the frozen oats out of the pan.
Place them in a ziploc freezer bag and keep frozen until ready to eat.

When you're ready to eat, place one or two in a bowl and microwave for
about 2 minutes.  Add your desired sweetener (I love pure maple syrup),
toppings and milk.
